About our Organic White Quinoa:
I could see why some of the grains took quinoa for snobby. He had a quiet way about him, a walk and a talk that just wasn't normal around here. He strolled, like a grain in a park without a care or a worry in the world, like he had on an invisible coat that would shield him from this low protein. Yeah, I think it would be fair to say…we liked quinoa from the start. One afternoon, we sat and ate with the sun on our shoulders and felt like gluten-free men. We could have been cooking some grain of one of our own houses. We were the lords of all creation. As for quinoa, well, he spent that time in the rice cooker, a strange little smile on his face, us watching it cook to perfection. I wish I could tell you that quinoa fought the good fight, and the other grains let him be.
I wish I could tell you that - but the grain portion of your plate is no fairy-tale world. Quinoa never said or complained about the lesser grains that replaced him, but we all knew. Things went on like that for awhile - the grain ladder consists of routine, and then more routine. Every so often, quinoa would show up with freshly seared salmon or salad. The other grains kept replacing him - sometimes he was able to fight 'em off, sometimes not. And that's how it went for quinoa - that was the routine.

Pumpkin Quinoa Breakfast Cookies
Ingredients:
- 2 eggs
- 1/2 cup Anthony's Coconut Flakes
- 1/3 cup Anthony's Chia Seeds
- 2/3 cup cooked Anthony's Quinoa*
- 1/3 cup Anthony's Organic Sugar
- 1/4 cup butter, melted
- 1/2 cup pumpkin puree
- 1 tablespoon cinnamon
- 1/4 cup Anthony's Coconut Flour
Instructions:
- Preheat oven to 350° F.
- Grease a large baking sheet with some coconut oil or butter.
- In a mixing bowl, combine the eggs, coconut, chia, quinoa, sugar, butter, and cinnamon. Mix well.
- Add the coconut flour and mix well.
- Drop by heaping tablespoonfuls onto the baking sheet and flatten out a bit.
- Bake for 15 minutes.
- Cool and enjoy!
Prep time: 10 minutes
Cook time: 15 minutes
Yield: about 2 dozen
*To cook quinoa, place 1 cup of rinsed quinoa and 2 cups of water in a saucepan. Bring to a boil. Cover, reduce heat, and cook for 15-20 minutes. Remove from heat and let stand 5 minutes. Fluff with fork. 1 cup of uncooked quinoa yields 2-3 cups cooked quinoa.
Carrot Apple Quinoa Muffins
Ingredients:
- 3 eggs
- 1/3 cup butter, melted
- 1/4 cup Anthony's Organic Sugar
- 1 cup grated carrot
- 2 apples, peeled and grated
- 1-1/2 cups cooked Anthony's Quinoa*
- 1/3 cup raisins
- 1 tablepoon cinnamon
- 1/4 cup Anthony's Coconut Flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 350° F.
- Grease a muffin pan.
- In a mixing bowl, whisk the eggs with the butter and sugar.
- Add the carrot, apples, quinoa, and raisins and mix well.
- Add the cinnamon, coconut flour, baking soda, and salt. Mix well.
- Scoop into 9 muffin cups.
- Bake for about 30 minutes.
- Cool completely and enjoy!
Prep time: 10 minutes
Cook time: 30 minutes

Quinoa Chocolate Chip Banana Pancakes
Ingredients:
- 2 bananas
- 3 eggs
- 1/2 cup milk
- 1-1/2 cups cooked Anthony's Quinoa*
- 1/4 cup Anthony's Coconut Flour
- 1/2 cup chocolate chips
- 1/2 teaspoon baking soda
- In a blender, combine the bananas, eggs, milk, and quinoa.
- Blend until smooth.
- Transfer batter to a mixing bowl.
- Heat up a large skillet to medium.
- While the skillet is heating, stir the coconut flour, chocolate chips, and baking soda into the batter.
- Grease the skillet with a bit of oil or butter.
- Cook pancakes in desired sizes until golden brown on each side (these take longer to cook than standard pancakes).
- Serve with maple syrup, extra bananas, and chocolate chips.
Prep time: 20 minutes
Yield: About 1 dozen pancakes

I was raised to never waste food but I don't think I'll be cooking this stuff a third time. It takes away from the dish and has to be hidden. I regret buying so much of it.

I'm starting to experiment, as my son has chosen to eat vegan. My first experience with Quinoa. No cooking directions on package. Easy enough to Google. Used 3 cups of water for 2 cups Quinoa. Cooked 14 minutes, let sit for 5; minutes. Perfect. Made Quinoa white bean sweet potato burgers. Will be ordering again. Great price. Also pre rinsed which is another plus.
First, the bag says “Pre-washed”. I usually wash/rinse my food even if something says it’s been pre-washed and I’m glad I do especially with this one. I had to change the water 2-3 times for it to actually come out clear. The water was very dirty (dusty), so if you already purchased this please wash yours before cooking it to be on the safe side.
Second, it has quite some black seeds and it was not specifically black quinoa. I tried to take them out but I’m sure they were still some hidden ones I couldn’t get too. I spent more time cleaning it than cooking it.
I don’t like throwing food away and since this is not returnable I’m not sure what I’m going to do with it, but sadly, I will not be eating this.
I add spices, turmeric, salt and pepper sautéed mushrooms, and garlic for taste.
