I was inspired to write this book because I felt there was a gap in the types of books covering the process of making hard cider.  They were either recipes that repeated the same things over and over or were very detailed and nuanced descriptions about the process without providing a lot of creative inspiration.  I felt there needed to be more balance and that the process should evolve to help readers grow in their understanding of how to make cider.  I also wanted to connect cider with food and bring those two elements together.  Ultimately, all these aspects require a little art and a little science, and I think this book provides just that.  I hope you agree.  Thomas Chezem

Thomas Chezem is an engineer and business manager by training and a craft cider maker by passion. Driven to understand the science behind the process of making hard cider while appreciating the art involved in crafting it, he writes to help others make and enjoy this ancient beverage. He has lived and worked in multiple countries and traveled extensively taking advantage of opportunities to explore and expand his palate; a critical skill in the art of crafting hard cider.
