If you just mix it with water and put it in a pan, you get a perfectly flat pancake of scrambled egg. It's strangely homogenous with no texture, but tasty enough.
Combined with other ingredients, you can't tell the difference. I use it together with dry milk to make just-add-water baking mixes.
Also, it's around twice the price of fresh eggs around me.
