Product Description

Chef's, restaurants, food service owners - are you looking for a gluten free flour blend that is fresh, superfine, and comes in bulk? TThe Authentic Foods Multi-Blend Flour is fabulous wheat flour substitute using a combination of our signature superfine flours. It can be substituted for wheat flour, almost cup for cup in any recipe (3/4 cup Authentic Foods Multi-Blend Flour = 1 cup wheat flour). When using this flour, there is no need to add additional xanthan gum because the mixture already contains xanthan gum! We want to emphasize how this flour is really unlike any gluten-free flour out there. When you bake with this flour, your baked goods will come out moist and without any grittiness. With this flour you can make all kinds of baked goods ranging from pancakes to pie crusts to cakes and even breads! Flour is gluten free, dairy free, nut free, and soy free. It is certified kosher by Rabbi Yehuda Buck span.

Better than Cup 4 Cup

Better than Cup 4 Cup
I'm a novice baker but when my 6 year old got diagnosed with celiac I had to learn to bake a lot of stuff for him. I've used this flour for cupcakes, muffins, and cut-out cookies and they've all turned out great! With Cup 4 Cup my batter always had a sticky gooey consistency and cupcakes or muffins tend to have a slight chewy texture to them. But using this blend (not quite cup for cup for regular all purpose flour) my baked goods came out just like their gluten counterparts. No weird taste either. In fact, during the holidays none of my family knew they were eating gluten-free goods until they saw my son eating the same thing! I highly recommend as this flour works on all my standard recipes!

My 12 yo daughter was diagnosed with Celiac in October of 2019 and we are big bakers so I am not going to lie- there were a few tears shed. I have tried all sorts of things - bakeries, recipes, all the flours, then mixing my own flours. I have an ATK cookbook, I looked at websites, we buy the Ciba products etc etc. But really all you wanna do when you are gluten free is replace the flour you already use in your own recipes and call it gluten free. This is that flour. I find that many gluten free recipes try too hard to be healthy or paleo or get you to mix their flour recipe which is just fussy. This flour is very fine but not powdery like cup4cup. It feels like regular flour. You simply substitute. If you want, you can use 3/4 cup for recipes that call for a cup or you can add more moist ingredients like milk or sour cream or yogurt. I made banana bread and choc chip cookies with this flour recently and you really would not know that they were gluten free. Also my son has a nut allergy and this flour is nut free as well (I believe- double check).

I use this GF flour for EVERYTHING and it's never let me down. Muffins, cakes, quickbreads come out moist and hold together just like wheat flour. I even use it to thicken gravies, stews, soups, anywhere you would use wheat flour in a roux and it works beautifully. I just made a very silky Thanksgiving gravy with it and nobody had a clue it was GF. The package says to substitute 3/4 cup in place of 1 cup of wheat flour, but honestly, I use it cup for cup and never had a problem. I hope they never change this formulation because it's perfect the way it is.

Have to say this is the best gluten free flour blend I have come across to date. I absolutely hate wasting money and was so stingy on trying gluten free versions because of all the flour blends and mixes I bought or made, so many turned out horribly! I think this is the first time I went back and bought another bag, it was that good. So far I have made pancakes, pie crust, cookies, onion rings, fried chicken and a few other things. They have all turned out perfectly. You couldn't even tell most of it was gluten free. Based on the reviews and instructions I havent tried any yeast recipes but for everything else it seems to be a clear winner. Best yet, its about the same price as most gluten free products!!!

Update: This is still the winner in gluten free flour blends HANDS DOWN. I have since used this flour to make a variety of baked goods from cakes, oven pancakes, cupcakes, churros, fry batters, and pretty much anything savory or sweet I can think of (except yeast recipes still havent done those based on the reviews). Everything has turned out wonderfully. Try this flour- you wont be disappointed.

Having just gone gluten free on the recommendation of my physician, I was worried about not gettting to eat all of the things that I love (i.e. cookies, cakes, etc). I enjoy baking so I thought I would try making chocolate chip cookies with gluten free flour as a trial run. I'd heard all kinds of horrible things about gluten free baked goods, especially bread (try Kinnikinnick Gluten Free Bread (frozen) - it's fantastic!!). I stumbled across Authentic Foods Multi-Blend Gluten Free Flour while searching on Amazon and although the price was steep, I thought I'd give it a try.

All I can say is WOW!!!! This is the real deal - - I could not taste the difference at all. The cookies were soft with just a hint of crispiness on the outside. I'm pretty picky about ingredients when I bake and I was completely and utterly won over. My family even commented on how yummy the cookies were (I didn't tell them they were gluten free until they were licking their fingers!). I will definitely buy this flour again and am going to try making cupcakes next. Can't wait to try them!!

P.S. It does say on the package not to use this flour in yeast recipes UNLESS the recipe is specifically gluten free. Not sure why, but I guess just don't substitute this gluten free flour in a regular flour yeast recipe.

Guess my reviews are under my husbands name. He has to eat gf; I don't, but mostly do so our house stays gluten free. I use this flour in my regular recipes except for breads. It has a little xanthan gum in it, so for pancakes, I don't add any, but for cakes, sweet breads and tortillas, I add 1/2 tsp. per cup. You can make the mix yourself, but I really like the convenience of this. Because of the whole grain brown rice, I store this in the fridge and bring it to room temp. before I open it, so condensation doesn't get in. The grind is superfine - it isn't gritty like so many are; in fact, if your recipe calls for cake flour, you can't hardly tell you aren't using wheat flour. Even when you replace AP flour with it, it is really good.
