Wonderful! I use this for business purposes. For those of us who bake by scales: pay careful attention to your measurements. 1 cup of Steve's Gluten Free Cake Flour is equal to 160 grams. That's a good 35-40 grams difference from most gluten based flours. This matters greatly where your flour amounts are, for instance, 3 cups. You would be missing approximately 120 grams if you tried to scale this like regular gluten based flour. Cup for Cup does not equal Gram for Gram. With this in mind, you can bake just about anything you want with this blend! The taste is clean with no "off" flavors that you get with a lot of other gluten free flours. We all know that "off" flavor.....like there's something in there that's just not quite right. Neither my bakery nor am I personally exclusively gluten free by any means, so I can attest that you would be hard pressed to tell the difference. This holds true where mouthfeel is concerned as well. Your finished product will not have that starchy, pastey, fine grit like aftereffect. It is smooth, fluffy, moist and holds it's structure extremely well. As far as cakes are concerned, I know of no other brand that can quite surpass this one....and there are some very good gluten free brands.

OMG it never occurred to me to use cake flour. I didn't even know there was a gluten free cake flour, LOL. I always used Bob's Red Mill 1 to 1 flour which is good, but this is the ultimate!! I've been gluten free for almost 20 yrs and served on the board of a Celiac Support Group at our local hospital. My family can attest to the fact that none of my food ever tastes gluten free. Now that I'm starting to bake more often I needed to find the right type of flour. This cake flour made my cakes moist, high and light, simply awesome. I highly recommend this without reservation. Edit: my cake was perfect right out of the oven. After it cooled, a day or two later (properly stored), it was super-dry, like saw dust ~ awful. When using this flour, serve the cake very shortly after taking it out of the oven - same day. Original review: My cake was divine! I made a recipe from The Magnolia Bakery cookbook, in fact their hallmark vanilla cake. I substituted Steve’s GF cake flour for regular cake flour called for - my version turned out to be a superior cake. I couldn’t have asked for better, and I didn’t need to make any adjustments. Will definitely buy it again!!

Every year I make the same chocolate birthday cake. This year we used "Authentic Foods Steve's Gluten Free Cake Flour Blend". Everyone tried a couple bites and we threw the whole thing in the trash.

The only difference was the flour. We normally use Bob's Red Mill or Cup4Cup flour and it tastes great. This year, I wanted to try a "Cake Flour" because I thought it might improve the consistency.

I honestly don't understand how there are reviews claiming this stuff tastes great. Even our 5 year old, who eats chocolate of any kind, said it tasted "like dirt".

I run an organic food co-op and gluten-free bakery from our homestead just north of Toronto, Ontario. I have made many, many gluten free blends and bought a few pre-made ones. I've worked with hundreds of pounds of gluten free flours.

This pastry flour works brilliantly for most applications (cake, cookies, squares, crumbles, pastry), it is grit free, has a very nice texture and can be used in many gluten based recipes with ease. I love that it is free of guar and xanthan which I need to keep at a minimum as I don't seem to digest them well.

I make gluten free gourmet cakes and this is my new go-to flour for most of them. We receive rave reviews for our cakes, especially that no one can tell they are gluten free, they are just delicious! I appreciate that it is made with non-GMO ingredients and would love to see Steve come out with an organic line.

I have 2 daughters with celiac disease. This flour is the best gf flour out there! You can substitute for all purpose flour in any recipe. Absolutely no grittiness or bad taste as with other gf flours. We've used it for 6 years and never had any complaints! We use the bread flour as well.
