This is the rice flour for gluten-free cooking. Unlike other rice flours, the super-fine grind is not gritty so baked goods can have the same smooth finish as those made from wheat flours. If tightly wrapped, it keeps indefinitely in the freezer so one can afford to buy it in bulk. I also highly recommend Authentic Foods' superfine brown rice flour and gluten-free flour blend. My wheat-eating husband says the cinnamon rolls I baked with it are the best he's ever eaten, wheat or no wheat, gluten or no gluten. If you've been disappointed with other brands, as we were, you really should try this.

My uses for this flour have been gluten-free pancakes, cakes, muffins, and cornbread. It's true, this flour is more finely ground than most white rice flours that are commercially available--even those that say they are very fine. If you bake gluten-free, you know sometimes the texture can be gritty despite your best efforts. Breads and cakes can turn out flavorful, but dense, overly heavy, and still crumbly. My recipes turn out much smoother, lighter, and fluffier with this flour. I cut it in conjunction with others depending on the recipe, and it's turned out great results each time.

It doesn't cost much more than grocery store brands, but the final result is worth the slight increase in price. Definitely recommend this flour for gluten-free baking.

I have several blends I make for specific qualities. This superfine white rice flour has a very bland flavor and binds well. It is not a substitute for white wheat flour. To mimic wheat several flours with different qualities are combined. I also add egg white powder, unflavored gelatin and/or egg replacer when needed. Cooking gluten-free brings out your inner chemist!

This stuff is beautiful. I use it to scrub my face, morning and night because I am using Retin-a .1 and it really helps me from looking too scary. The last brand of rice powder I bought from another was very gritty and irritated my very sensitive skin. This powder is very fine and makes a fine paste when mixed with water.

This is one of several rice flours that we've tried recently (Celiac and wheat allergies in our house). This is a fine flour that tends to give a fine crumb and a crisp or crunchy outer texture to the bread and cookies that we make with it. Some recipes needed longer baking times, due to slightly denser texture of the items, but it hasn't required the hydration time (letting a mixture sit before baking, while the flour absorbs moisture) that other flours like sorghum, coconut, and some coarser-grained rice flours need.

I strongly recommend this brand, and we will order it again.

I've been baking gluten free for two years now, as a way of helping our adult daughter who has an autoimmune disorder. Her symptoms and health have improved tremendously since eliminating gluten and making wiser food choices. I have used several brands of gf flours, and without a doubt Authentic Foods superfine flours are the best. This superfine white and the superfine brown rice flours result in amazing baked goods that have none of the grittiness that other brands tend to have. I have also used AF's superfine sorghum, as well as their tapioca, potato starch (way different than the flour), arrowroot, and have always been pleased with the products.
Since it is a bit pricey, I like to purchase and stock up whenever a good price comes along, thus I ordered several bags of both the white and the brown rice flours on Amazon. I have tried King Arthur Flour Company's products, and they are excellent products as well, but for the best possible baking experiences, Authentic Food's flour are tops.
