Also, the internal thermometer is about 30 degrees off from what my Bluetooth digital meat probe shows, so not sure what to believe is the actual temp. The first one of these I got was really bad at getting to temp, and the digital module and temperature did not work at all. I found there was a wire off inside of the digital module and that got the module to power up, but the temp measured way off (30-40 degrees) I called Bradley about the underpowered issue and they basically just told me too bad and that 500 watts should be plenty. After some arguing with them, they would not replace the unit but shipped me a new heating element and temp probe. I had to install both of these myself, and that was no fun at all. It was just past the returnable window for Amazon, and under full warranty. Bradley was not pleasant to deal with, nor were they accommodating on the phone.
Other than that, the wood burning plate and mechanism work fine and it does a good job smoking, but trying to get it to cook your meat at the proper temp is the biggest issue. I believe this would be good for smoking cheeses. I do still use this because I paid over $400 for it, but I will never recommend, nor buy another Bradley product; nobody in my giant family will either, as they all know the issues I've had with mine. If you do get this and plan to smoke ribs or something else, plan to add an hour or more to the cooking times to get the temps up to where they need to be. I cook ribs in this thing, but that's about the thickest meat I will use it for. I put them in this thing for 2.5 to 3 hours just to get some smoke. I then wrap and put the ribs in the oven at 250 for 2.5 more hours, I then sauce and finish them off on the grill to get a little char. The ribs come out great, but this smoker sucks unfortunately and is certainly not a set it and forget it unit unfortunately. I should be able to leave the ribs in this thing for the entire 5-6 hours, and be able to open the door and spray/baste, but as soon as you do that you will lose 50 degrees and it takes forever to recoup the temp. I hate to say it, but stay away from this line of smokers until they add an additional heating element and pay attention to their quality control; they should also learn how to give decent customer service.
