About the Author
Nicole Salgado is of both Mexican and European descent, and grew up in Central New York. She holds a B.S. from Cornell University, and an M.A. from San Jose State University. A biologist and educator by training, she is also an avid artist. Nicole was exposed to authentic Mexican cooking early on, during travels to Mexico, and while living in the San Francisco Bay Area. Since 2006, she has lived in her husband's home state of Querétaro, Mexico. There she was exposed to her extended family's traditional corn farming practices and the preparation of nixtamal among other native Mexican foods. In an effort to combine their passion for good food and environmental well-being, she and her husband undertake a number of sustainable projects such as an organic garden. I really wish that there was more pictures of the food. But the book is still nice to get some tasty recipe ideas. Especially for those who grew up with this food but don't know how to make some of those foods, like myself.
Another great bonus is the interesting information about the ingredients along with beautiful photos. The cookbook also contains the author's artwork which adds a nice personal touch!
The recipes are light but filling, easy to prepare, healthy, and delicious! Great explanations of what the foods are, how to best select and prepare,
and attractively serve. Personal notes and observations make it all the more fun! These genuine local recipes are the original healthy Mexican food
and taste great, using fresh and economical foods. Great to use to cook and eat with friends.
