i've been blindly using Fleischmann's yeast for so long that it never occurred to me to try anything else. well i finally did and now i won't be going back. using the exact same proportions, temperature, moisture content, etc., the rise from this yeast was noticeably higher and sustained longer. obviously this ended up having more oven spring as a result. when you factor in that this is about 1/3 to 1/4 the price, it's a pretty easy decision.
