I don't know what that one-star reviewer is talking about. I had never baked cupcakes before. Bought this book and immediately began baking cupcakes and they turned out wonderful. It's not going to make you an expert decorator overnight, but the basic master recipes are solid, and the methodology is top notch. Very light, fluffy batter. Very tasty. Highly recommended to anyone just starting out and looking for a solid foundation.

Other books have been written about cupcakes - but this streamlines the baking process, using fifteen 'master' cake recipes for cake batters and frostings and teaching how to customize and build upon them. I really enjoyed this book especially the creativity of the cupcakes. I made several (key lime, lemon merigue, orange) and got rave reviews when I brought them to work. You must like to bake if you use this book. A lot of the recipes have multiple parts of preparation. Also, after making the first batch of the author's recipe for the cupcakes themselves I decided to use my own cake recipes as I found that the ones in the book to be on the dry side and more complicated than cupcakes needed to be.

This small book is packed with a fantastic assortment of cupcake decorating ideas. I found that a couple were way too involved and time consuming for most home bakers, but for the vast majority of the recipes this book is perfect to dress up a holiday or birthday (or just a rainy weekend!). Overall this is a great addition to any baker's bookshelf!

This is the third book of Ms. Wilson's I have purchased: her chocolate truffle book, Wedding Cakes You Can Make and just recently, this great book.

I much prefer spiral-bound books which this one is and I read every recipe from cover to cover. I put sticky notes on the ones I wanted to try right
away and yesterday made her Cookies 'n' Cream Cupcakes - WOW! I followed her directions to the letter, made the Classic Confectioners' Sugar Frosting - used the Oreo cookies, chopped away. Using my 'best girl friend' - the lovely KitchenAid stand mixer (also purchased from [...] -
I can tell you that I've never tasted any cupcake so delicious - the cupcake was so soft to eat - didn't crumble/fall apart - just absolutely perfect. I
always make notations on recipes and I wrote: "So light and delicious."

Being a perfectionist, I can tell you that I am highly critical of what I make and quick to point out if I have a bad recipe to follow. No matter how good of a baker you are, you're only as good as the recipe.

As a side note, in Wedding Cakes You Can Make, Dede was kind enough to include her email address. I ran into trouble on a cake I was commissioned to make for a shower. I searched the Internet for answers - then remembered Dede's email address was in the book. With one day to go before the delivery date, I was down to the wire. I wrote to Ms. Wilson, explained my problem - within a few hours, she wrote back and gave me step by step instructions on how to fix my problem and how to prevent it from happening in the future.

I am going to see what other book this very talented lady has written and order them! I'd rate this a AAAA+++++.

(I buy nearly everything from [...] - is this a great company or what? No tax, no shipping, no hassles and polite customer service reps. I always shop here first as I don't like shopping but sure is great to sit here, find what I want and push a button!)

I've always wanted to decorate cakes or cupcakes so when my boyfriend bought me this book for Christmas, I was thrilled. At first I hoped there would be more decorating ideas but I realized how valuable the recipes for cake and frosting were. My friends love the cupcakes I make and I love the brownie cupcakes. This book gives you tips to make the recipes your own.

I bought this cook book several years ago when the cupcake craze began in my area. I was a brand new baker at the time, and completely clueless to anything from flour type to pans. I honestly learned a lot about baking in general from this book. I appreciate that Dede opens her books with lots of information on recommendations for the proper products to use (from flour to pans and spatulas) and tips on the type of ingredients to use. For example, she mentions you always want to use full fat versions of things like milk and cream cheese. Coming from a health conscious household, I never thought of using anything but nonfat, but it DOES make a difference!

Her book is extremely organized. She provides core recipes for cakes and frostings in the front, and then the rest of her book is filled with fun themed cupcakes, all which are variations on her core recipes listed in the front. Also, several people have already mentioned the amazing spiral binding, but I love it too, so I had to mention it!

The most important thing in a cook book is consistency. As a cook or baker, you expect that recipes to come out right if you follow all of the directions completely. With this book, I have had excellent results EVERY time. This is ALWAYS the first book I consult when making cupcakes.
