We use this with a Blackstone oven with temperature of the steel at about 700-900 F and the air in the oven at about 450-500 F. But the steel gets too hot to cook the pizza directly on it. We use a wire mesh screen to space the pizza from the steel.
So we shape dough and put it on a well seasoned and well oiled mesh screen. Then top the pizza and slide the screen onto the steel. Bakes in about 2-4 minutes. Remove from oven and place on a wire mesh stand for a couple of minutes before adding finishing toppings and slicing.
We also get the best pizza crust texture and crispiness using King Arthur Hi Gluten Flour along with a small amount of potato starch
