I've been trying to transition away from plastic cutting boards and in the past, never had an issue with bamboo. Solid wood boards were a little too much for what I wanted to spend on cutting boards so I settled on these. I use this for all non meat items that I need to cut up, I still use my plastic board for meat as I'm worried about bacteria and don't use porous boards for this reason. I've yet to oil my board but so far it's holding up well. I don't put these in the dishwasher and hand wash all of these. There are some marks from my knives but isn't a big deal for me. These boards do stain, I found out the hard way with some strawberries. The stain eventually washed out but it took a few weeks. If you use these, wash them immediately. I have the three piece set which I find is actually a good solution if you are planning to cut a variety of foods or if you can't wash them immediately.
