About the Author

Robert F. Moss is the Contributing Barbecue Editor for Southern Living and the Southern Food Correspondent for Serious Eats, and his work has also appeared in publications such as Garden & Gun, the Los Angeles Times, the Charlotte Observer, and Early American Life. Robert is the author of Barbecue: The History of an American Institution (2010), the first full-length history of barbecue in the United States, and Going Lardcore: Adventures in New Southern Dining (2012), a collection of essays about dining in the modern South. A native of Greenville, South Carolina, Robert received his B.A. from Furman University and received a Ph.D. in English from the University of South Carolina.

Few people are as well versed as Robert Moss not only about BBQ in the Carolinas, but about BBQ in general. He previously published Barbecue: The History of an American Institution and has penned numerous articles in publications such as Southern Living, Serious Eats, and the Charleston City Paper. Moss's is a voice to be listened to when it comes to BBQ in the Carolinas and beyond.

As someone who publishes a site dedicated to all things SCBBQ, I ordered my copy once it hit the stands, eager to devour it. It did not disappoint. Moss is a food historian and his work is backed not only by research worthy of a Ph.D. (which he has earned) but is filled with the knowing nuances of experience. This does not read as a cold textbook published by Dr. Moss, but as the warm, appreciative narrative of a friend who shares his passion for a cultural experience unique to his own Carolina roots.

The book provides a brief history of Carolina BBQ, examines the regions that somehow simultaneously divide and unite two states, spills into SC's unique contribution to the BBQ world - mustard-based sauce and hash -- and provides recipes you might like to try yourself. Among my favorite parts of the book are the numerous interjections scattered throughout, shedding additional light on the topic at hand.

In addition, Moss takes us into dozens of the Carolinas best BBQ joints -- such as Scott's BBQ in Hemingway, SC, or Skylight Inn in Ayden, NC -- and gives us a front row seat in the very places we will want to dine, whether we know it or not.

If you are a fan of BBQ, you will want this book, especially if you happen to have the pleasure of living in or visiting the Carolinas. Bring it with you on your next road trip and find your own favorite BBQ destination.
