Unusual, but I thoroughly enjoy it
I make my own simple syrups, so I rarely use brand options unless they offer something unusual like this one does. I wasn't sure how this one would taste, given the ingredients, but I like experimenting with drinks, so I thought I'd give it a try. I'm glad I did. I thoroughly enjoy it though I imagine not everyone will. The best way I can describe the flavor is that it tastes like tonic water, elderberry, and a gentian-leaning amaro rolled into one (the latter is likely due to the wormwood) . It's complex but well-balanced and works extremely well mixed into a plain seltzer for a hint of flavor. I also used it in a variation of a Manhattan, replacing the sweet vermouth with an equal amount of Wild Tonic and changing the two dashes of Angostura to Regan's, and it worked nicely. I have no doubt it will also go well in simpler gin-based cocktails, but I'd hesitate to use it in any recipe that offers its own complexity. The simple syrup base is also nicely done. It's not cloying and doesn't have an odd aftertaste as many large-production simple syrups do, and it mixes cleanly. It's clear this company is using high-quality ingredients. On a side note, this bottle is well-protected and opening it was humorous. Once I'd finished unraveling it, it looked like I had a cardboard scorpion in my kitchen. At 19.99 for an 8-ounce bottle, the list price isn’t inexpensive, it also isn’t bad for something this unique and well done. I'll definitely get it again.

    I ordered this as a stopgap for a cocktail as my preferred rosemary simple syrup brand was out of stock. I made the cocktail with my usual recipe and was astonished at how different it was. This is a STRONG syrup. I had to cut it with 1 part this syrup and 3 parts basic simple syrup to get a drinkable cocktail. I recognize some people may be looking for this so I’m hesitant to rate this poorly based on something that could be personal preference, but I’d be hard pressed to imagine any cocktail made with any measurable amount of this syrup undiluted that doesn’t taste like Vick’s Vapo-Rub.

    Bought this to make a special holiday cocktail, Pointsettia Cranberry Cocktail. I had one at Biltmore’s restaurant, The Stable, and it was delicious. They listed the ingredients and it included rosemary syrup. This syrup is perfect and can be used in other than just a drink. I think it will be good with beef and pork as well. Was very happy with the flavor, delivery, and packaging. Would buy again.
