It's an incredibly versatile, gluten-free kitchen essential that is approved for many dietary preferences and can be used in all types of cooking and baking recipes. To get the slightly sweet, nutty flavor and powerhouse nutrients in almond meal, we grind local California skin-on almonds in our peanut-free facility.

Almond Butter Coconut Granola Bars

1. Preheat oven to 350 degrees F. Line an 8×8” square baking pan with parchment paper, grease, and set aside.

2. Place the dates into a bowl and add enough boiling water until the dates are completely submerged. Let soak until softened, about 30 minutes, drain and set aside.

3. Mix oats, coconut, Barney Almond Meal, salt and cinnamon together in a large bowl, set aside.

4. Add the drained, soaked dates and almond milk to either a food processor or high-powered blender and blend, starting on low speed and increasing to high until ingredients are well blended and mostly smooth (there will still be a few date pieces at this point).

5. Scrape down the sides of your container and add the melted almond butter and vanilla extract. Blend starting at low speed gradually increasing to high speed until the mixture is smooth (about 30-60 seconds). If necessary, scrape down the sides of the container and continue blending!

6. Pour the wet mixture into the bowl containing the dry ingredients. Mix by hand until well-combined. Add chocolate chips, if using and continue to mix until they are evenly distributed throughout the batter.Use hands to evenly distribute the mixture into the prepared baking pan.

7. Use fingers or a small off-set spatula to smooth out in the pan. Bake until the top is set and the edges

are golden brown, 20-25 minutes. Be careful not to over bake or the granola bars will be crumbly! Set the baking dish on a wire rack to cool completely, about 1 hour.

8. Once completely cooled, use the parchment paper to lift the final product out of the pan and transfer to a cutting board. Cut into bars and enjoy.

Store in the refrigerator or freezer in an airtight container!

  • 1 cup packed chopped Medjool dates & 1 cup shredded, unsweetened coconut
  • 1 ¼ cup quick-cooking oats
  • ¼ cup Barney Butter Almond Meal
  • ½ tsp sea salt
  • 1 tsp ground cinnamon & 1 tsp pure vanilla extract
  • ½ cup unsweetened vanilla almond milk
  • ½ Barney Butter Smooth Almond Butter, melted in the microwave (30 seconds to 1 minute)
  • ¼ – ½ cup mini chocolate chips (optional)

I made the iconic Clementine cake (well I used cuties lol) from the movie secret life of Walter Mitty with this inexpensive almond stuff (I didn’t need almond flour because it was too powdery but this was the perfect texture and way cheaper here on Amazon than the stuff in stores!!) sure it’s a smaller bag but it had more than I needed (over 2 1/2 cups). If you haven’t seen the secret life of Walter Mitty yet, it will feed your wonderlust and some of the cinematography is breath taking!!
