Using a plane grater, grate 2 cloves fresh garlic into your mixing bowl, add 1/4 tsp cumin, cayenne to taste, salt, juice of one fresh lemon (at least 1/4 cup of fresh juice). set aside, in a second small bowl mix 1/2 cup tahini w 1/2 cup warm water...it will look curdled, just keep mixing gently but firmly until the mixture becomes smooth...dribble in extra warm water if mixture is clearly too thick...add 3 tbs good olive oil. Add tahini mixture to first bowl, mixing well, set covered on counter so flavors blend, they will deepen as garlic, cayenne bloom, so don't adjust spices, salt too early.
I use this sauce for almost everything; roast chicken, fish, on chopped vegetables as a dressing, and with toasted pita any time-BTW, unless you prefer pita CHIPS, always light a gas burner on low and place pita on top until it 'poofs' slightly, toast on both sides. ENJOY!!!!
1 (15-ounce) can chickpeas or 1 1/2 cups (250 grams) cooked chickpeas
1/4 cup (60 ml) fresh lemon juice (1 large lemon)

2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
2 to 3 tablespoons (30 to 45 ml) water
Dash ground paprika, for serving
I wrote this review because the Amazon distro for Baron's, "Great Ones For You," kept bombing me with email. I'm currently using the third (or is it fourth?) order of the product, and the quality has been consistently good, so I feel safe to review it.
Sesame salad dressing:
2 tablespoons tahini
1 tablespoon tamari (or soy sauce)
1 tablespoon apple cider vinegar
Agave nectar to taste (depending on how sweet you like your dressing)
Dash of water (add more if you like thinner dressing)
Pinch of black pepper
1 tablespoon of white sesame seeds
You just mix all the ingredients in a cup/bowl and it's ready to use. The dressing is a mild nutty flavor with a little bit of creaminess. The apple cider vinegar adds the acidity which is a nice balance.
The flavor is great and as others have mentioned- it's a slammin' deal compared to buying it in the store. Only complaint is that it is not a screw-top lid, which will oxidize the oil faster, but if you keep it in the fridge and use it regularly, I can't see that being a problem.
Think I've found my new go-to tahini.
I take a can of chickpeas and dump them into a bowl, liquid and all. I add a couple cloves of garlic and microwave it all for five minutes. Dump that into a food process with a couple tablespoons of lemon, a teaspoon of salt, two tablespoons of olive oil, half a cup of tahini and you have a great plain hummus. I also like to add sun-dried tomatoes.
Put half a cup tahini in a jar, two tablespoons brown sugar, two tablespoons of lemon, a pinch of salt, and a bit of water until it has the consistency of pancake batter. Shake up the jar and adjust the sugar to your taste. It is great on a kale salad with white beans and homemade croutons.
Miso tahini dressing
A quarter cup of tahini and miso paste and a teaspoon of garlic powder. Add warm water until runny. It is great on salad, soba noodles, etc.
