This method of brewing coffee is how most Italians make coffee at home, so I’m used to this. It is not the most efficient way to make daily coffee, since there are espresso machines using capsules, but I find the taste to be better using the pot.
Ps: if you start with very hot water in the base of the pot, it will take less time for the water to boil and the coffee to brew, so it will taste a lot cleaner and smooth.

Select a quality blend, suitable for the production of coffee for the Moka. Fill the boiler up to the lower level of the safety valve, without exceeding it and using fresh water, possibly low in limestone. |
Fill the filter generously, without pressing the coffee powder, forming a small gutter and avoiding dust escaping on the edges of the boiler. Close the coffee pot, screwing the collector firmly onto the boiler and place it on the stove. |
The flame must never envelop the coffee maker, but remain inside the bottom of the same, in order to allow extraction in adequate times and not too quickly. As soon as you start to hear the typical Moka gurgle, the coffee is ready and you will need to turn off the fire immediately. |
Never let excess coffee boil: this would burn it, compromising its success and making it too bitter. Enjoy hot coffee, as soon as it is ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than that leaked at the beginning of boiling. |

Carrément dangereuses. Le fond de la cafetière a carrément fondu sur la plaque en vitrocéramique, détruisant celle-ci par la même occasion. Nous avons pu intervenir juste à temps afin d'éviter un incendie. Je ne sais pas dans quel alliage est construit cette cafetière, mais il est évident qu'elle ne peut pas être en aluminium qui a une température de fusion de 660°. Pour une cafetière les études de résistance des matériaux ne semble pas avoir été réaliser.Reviewed in France on April 21, 2020
Un client extrêmement mécontent car ce n'est pas uniquement la cafetière mais la plaque en vitrocéramique qu'il faut à présent changer.
