How to make a perfect italian coffee

|
Select a quality blend, suitable for the production of coffee for the Moka. Fill the boiler up to the lower level of the safety valve, without exceeding it and using fresh water, possibly low in limestone. |
Fill the filter generously, without pressing the coffee powder, forming a small gutter and avoiding dust escaping on the edges of the boiler. Close the coffee pot, screwing the collector firmly onto the boiler and place it on the stove. |
The flame must never envelop the coffee maker, but remain inside the bottom of the same, in order to allow extraction in adequate times and not too quickly. As soon as you start to hear the typical Moka gurgle, the coffee is ready and you will need to turn off the fire immediately. |
Never let excess coffee boil: this would burn it, compromising its success and making it too bitter. Enjoy hot coffee, as soon as it is ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than that leaked at the beginning of boiling. |
THE BIALETTI LOGO
The gentleman with the moustache gracing all Bialetti products represents Renato Bialetti, the son of the inventor of the Moka, Alfonso. It was designed in 1953 by the Italian artist Paul Campani.

Ps: if you start with very hot water in the base of the pot, it will take less time for the water to boil and the coffee to brew, so it will taste a lot cleaner and smooth.
These pots are very durable. Purchased our first one 3 years ago and it's still going strong, just needed a second one so I could stop carrying it from work to home. Tried a full espresso machine, but there are too many parts that can break and the moka pot takes less time to brew.
The coffee is a perfect concentration. Not too strong and not in any way weak - nice and flavorful. Don't do a full espresso grind as it's too small and some of the grounds are lifted up into the pot. The happy medium is between a drip and espresso grind.
We use these for about 5 cups a day and I recommend them to all our coffee drinking friends. They even say my coffee rivals the coffee house and I don't buy the best beans - shop around for an affordable, quality bean (we like Barrismo from Aldi $4/lb - it's fabulous).
Tip: Keep your grounds and scatter them in the garden. The plants love it!
The 9-cup Moka Express makes plenty of coffee for us junkies.
The coffee is truly very good reminds me of the coffee we had in small cafes while we were visiting Italy. Starbucks coffee now tastes very crass and burnt after getting used to this. Got Lavazzo beans and I grind them as needed when brewing.
One thing to remember is that the 3 cups size is in reference to espresso sized cups. from an American coffee serving size level - 3 cups = 3/4 cup size of a Tall coffee in Starbucks...
Please be aware of this... I love this product and the coffee.
The first impression of brewing is a bit magical, even if it's a throw-away pot as recommended. Keeping the lid open and watching the nectar emerge from the stem in the top of the unit is addicting. Just be sure to close the lid before it finishes or it'll spit espresso droplets all over your stovetop. A tip to halve the brewing time is to fill the bottom section to just below the relief valve with boiling water from your kettle. I always make Americano so I boil water every time anyway. If you do this, you'll need an oven mitt in order to firmly tighten the sections. Please don't use the handle for this purpose. I believe the characteristic shape is there to facilitate a good grip for this reason.
As for the espresso, it's everything described in the other posts. It's much stronger than that produced from my DeLonghi EC-155 espresso maker (which I also love) using the same amount of coffee. This unit makes enough espresso for two smaller Americano's (perfect for a loving couple) or one larger robust mug. The quality of the coffee is paramount. Find a local coffee shop that roasts in-house and start trying the various roasts in 1/2 lb bags. Try to buy as much as you'll use in two weeks or less, just to keep it fresh. Buy it whole bean and pick up a grinder. Blade or burr - it doesn't matter which. I like blade since it gives me more control over the grind as I experiment. Coffee is a hobby, not a drink!
One thing you might not appreciate is the extra sediment, akin to what you experience with a french press. The easy solution is to use the filter disks from an Aero Press. They fit perfectly over the filter in the top section. Just dampen the metal filter first so the paper filter sticks in place. Problem solved! It helps to have an Aero Press and a gazillion filters, of course, but I digress...
Be sure to obey all of the instructions about cleaning (never soap, never never dishwasher) and tamping. The last one is hard to swallow but trust me - one heaping 1/8 cup scoop of beans in the grinder loosely fills the basket about 3/4 of the way. That's perfect for a strong mug or a couple of cups for you and your special coffee buddy.
I take mine with heavy cream (soo yummy). It's a lot better than half and half. Please don't tell me you use coffee mate. Some things should just be against the law, and that's one of them! I hope you find this little gem as delightful as I have. I packed up the beloved DeLonghi EC-155 for a trip to its new home in my office - which lacks stovetop. This little guy is really all you need. I haven't been to Italy but this experience makes me want to go! Ciao!

Coloque o café moído no funil.
