Thousands of years ago, chia seed was a staple in the diets of ancient Mayans and Aztecs. The word chia is derived from the Mayan word meaning 'strength'. Aztec warriors relied on chia seed to boost energy and increase stamina. Today this tiny seed is a favorite of athletes, especially distance runners, who tout it as an endurance enhancing superfood. Use chia seed in smoothies and puddings, sprinkle on top of oatmeal and salads, and add to baked goods for a nutritional boost.
This refrigerator jam takes advantage of the gelling quality of chia seed, using it as a nutrient-rich substitute for pectin.
Combine berries and agave in a small saucepan. Cook over medium heat until berries begin to soften and burst, about 5 minutes. Add chia seeds and cook, stirring often, until very thick, about 15 minutes. Stir often. Remove from heat and let cool. Stir in vanilla extract. Store in the refrigerator for up to 1 week. Makes 10 servings.
