Works as well as regular wheat flour, with the exception it has no gluten, which I compensate by adding xanthin gum to the recipes I use it in. I have developed several gluten free recipes for cakes and cookies that my grandson can eat. He is gluten sensitive, but does not have celiac disease.

This is bound to have some good use but making pie crusts isn't it; at least not by the recipe I've used most of my life. After trying to use it in a traditional Betty Crocker English Pie Pastry Crust (the only pie crust worth having) I threw the rest of this out. I had tried to make a pie crust for my step daughter who has trouble digesting gluten. Previously, I used Glutino pie crust mix and was really pleased with it. I was hoping, by using this all purpose baking flour, I could avoid that expense. Good idea but it just didn't work.

2 stars because it actually worked and appeared to be a normal product. However the smell and taste was horrible. It smelled and tasted like beans. I have used many mixes and bake gluten free. And have even used their 1to1 mix and loved it. This is just all together horrible.
