Almost forgot - bake the treats @ 350 for 20 mins, then flip 'em and bake 'em 10 mins more.
Of course, we don't just reserve this quinoa for the pups' treats. We use it for DELICIOUS pancakes for ourselves, too. :-)
Overall, this is a great organic flour.
Quinoa Brownies (gluten free, dairy free)
1 cup quinoa flour
1 cup melted coconut oil (or grapeseed or canola)
1.5-2 cups granulated unbleached sugar (organic cane sugar, or maple sugar, or coconut or date sugar all work. Just not turbinado)
2/3 cup unsweetened cocoa powder
1/2 teaspoon aluminum-free baking powder (I use Rumford brand)
1 teaspoon sea salt (or 1/2 teaspoon regular salt)
2 teaspoons vanilla extract
4 brown eggs (This is a forgiving recipe, but it relies on these eggs. You can't leave them out!)
1 teaspoon espresso powder (optional)
2 tablespoons powdered peanut butter (optional)
1 teaspoon almond extract (optional)
3/4-1 cup Enjoy Life soy/gluten/dairy/nut- free chocolate chips
Preheat oven to 350 degrees F. Grease a 9"x13" pan with coconut oil. In a large bowl, add all ingredients except the chocolate chips and mix until just incorporated. Add the chocolate chips and stir a few more times. Transfer to pan and smooth out with spoon or rubber spatula. Bake for 20-25 minutes. It may take a bit longer, depending on your oven and ingredients. When they are done, they will start to pull away from the edges slightly.
These taste really good and are a big hit at church potlucks, where people with allergies often have to skip the dessert area. I make them without the almond or peanut ingredients for potlucks. I don't recommend adding nuts, as the quinoa texture might be weird alongside walnuts. The textures of brownie and chocolate chips/chunks compliment each other well, though.
We got the subscription from Amazon Prime so we wouldn't have to remember to order it - it shows up exactly when we are ready for more.
