I used this to make blueberry muffins from a cookbook (for Gluten free recipes) by America's Test Kitchen. This particular cook book has a lot of education on what works & what does not with Gluten free flours. The ATK recipe worked really well! (And, yes, there was some almond taste to the muffins .) There are a lot of gluten free flours available, as well as personalized mixtures that fit a particular use or taste. The whole Gluten Free thing is pretty complicated.

Love this product! So far I've made pancakes, cookies, cake and flatbread. The flatbread was the only fail IMO, I would try again and make sure I roll it out really thin, thinner then recommended, because the thick parts were really uninteresting, maybe try to add some herbs. All the other things I baked were delicious and moist, best pancakes I've had in a while! I'm knocking off one star for the cost, I'm sure I could make a blend on my own for less, but past experience has shown me when you buy all the different flours, etc. you don't use them at the same rate so you end up with leftovers and I don't have that much storage space!
