Bob's Red Mill, Whole Wheat Pastry Flour

Whole wheat pastry flour is milled from white soft wheat, whereas regular whole wheat flour is milled from red hard wheat. It has a lower protein content than regular whole wheat flour and it makes wonderfully tender whole grain baked goods like pie crust, muffins, quick breads, pastries and cookies, yet it still retains the nutrients of the bran and germ. Use Bob's Red Mill Whole Wheat Pastry Flour in virtually any recipe where baking soda or baking powder is used as leavening. It will not work as well with yeast dough, due to the lower gluten content. Add graham flour for extra texture.

RIP Bob Moore. I have used Red Mill products for decades. All of these products are milled well, perform excellently and produce tasty goods. My main use is for making sourdough. A full cup and 82F water for starters and 15% (55g) mix with Bob's Red mill Artisan Flour (400g) for the dough ball which produces an excellent "nutty" flavor. The crust is so tasty. It responds well to 100% Hydration for excellent sourdough crumb.

Recently I had a double treat. It was a blustery winter Sunday and the mailman turned up with my order of Bob's Red Mill whole wheat pastry flour a day earlier than expected. It was the first time I was the happy beneficiary of Amazon's new arrangement with the US Postal Service to deliver shipments on Sundays. I suppose I thought that was only going to be for Prime members, not ordinary shmoes like me.

I've been baking for many years but had never tried pastry flour; I'm not even sure it was on my radar. Then I saw it here on Amazon but it was certainly higher than I'm used to paying for flour. I checked local stores and realized pastry flour doesn't come cheap. I do most of my baking with a generic whole wheat flour and mix in regular white as needed, particularly for breads that would come out quite leaden with only whole wheat, like muffins or pizza crust. The product bag says it works best with baking powder and soda breads. I had read in a review however that it made good pizza crust. I make pizza every week and it's one of my specialties so I just had to try the pastry flour. The dough it made looked and felt like a wad of clay. It didn't rise very well either and spreading it out on the pizza pan was not unlike trying to spread clay. Things weren't looking promising. But I managed to spread it and put on light toppings of olive oil, shredded mozzarella and fresh oregano that I snipped from under my makeshift cold frame covering the herb bed. It baked and browned on the bottom quickly. And oh my lord! The taste!! It was like a freshly baked loaf of bread in the shape of a pizza. I don't think I've ever had a crust like that, anywhere. I couldn't get over how good it was.

Clearly, whole wheat pastry flour is not intended for yeast breads and it makes a weird consistency dough that's hard to use, but in the case of a pizza crust at least, those drawbacks are small quibbles considering the end result. I also made healthy veggie-based brownies (as per Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food) with the flour and while they didn't even compare to the quality of the pizza, I don't think I can fault the flour so much as a heavy hand with the vegetables, too slight of one with the sugar and a bunch of over-mixing, all of which were my fault! (I've made the brownies a bunch of times and it's been fine.)

$4 plus a bag for flour is high for me but as an addition to my regular unfancy-flour baking, I expect pastry flour to be a wonderful treat. I may try using it half & half with regular (cheap) whole wheat for some baking and will report back here how that goes. As a regular baker I am just so excited by this new addition to my repertoire!

Not everyone wants or needs whole wheat pastry flour. This, it has be one a specialty good and not available in my small.town.

Bobs Red Mill is IMO the best available while wheat pastry flour. So nice to find it at Amazon. I typically place a large order once or twice a year directly at Bobs to avoid shipping charges. This helped to fill the gap.
