| How it's made | Minimally processed, oat groats are the whole grain from the oat plant. They are processed to remove the husk and any farming debris. | Steel cut oats are whole oat groats that have been cut in half, or thirds. | Thick rolled oats are steamed and then pressed flat. The thicker the oat, the longer they take to cook, and the chewier they are. | Quick cooking rolled oats are steamed and then pressed very flat. Because they are very thin, they take less time to cook, but also don't hold their original shape well. | Scottish oats are stone-ground oat groats. If the stones were closer together, it would form oat flour. This forms a smooth textured cereal that's packed with whole grain goodness. |
| Liquid to oat ratio | 1 cup oat groats to 3 cups liquid | 1 cup steel cut oats to 3 cups liquid | 1 cup thick rolled oats to 2 cups liquid | 1 cup quick cooking oats to 2 cups liquid | 1 cup Scottish oatmeal to 3 cups liquid |

The oats come in a branded resealable bag emblazoned with a lot of messaging on the front, including "an employee-owned company", "the 100% whole grain award winning cereal", and "the Golden Spurtle". What I especially liked about this bag is that there are a few transparent sections near the bottom that lets you see the actual steel cut oats inside. Looking inside the bag, the oats appear to be of high quality and there is minimal/no? sediment. The back side of the bag includes your standard Nutrition Facts, a brief blurb about the Golden Spurtle, and a couple of preparation methods (stovetop and traditional slow cooker).
Bob's Red Mill Steel Cut Oats are true steel cut oats that have that fantastic bite, texture, and inherent dietary benefits you would expect from steel cut oats. I performed a quick comparison of rolled, "cracked n' toasted", and Bob's steel cut oats using Nutrition Facts (normalized for serving size) and was surprised to find that Bob's steel cut oats provide almost double the calories, total fat, total carbohydrates, dietary fiber, total sugars, and proteins vs. an equivalent amount of rolled oats. I believe much of that is due to steel cut oats being almost 4x denser/compact than rolled oats with a side benefit of providing a longer sensation of being full.
My go-to prep method for steel cut oats is to add 1 cup water with 1/3 cup steel cut oats (3:1 ratio) to an Instant Pot, set it for five minutes high pressure on manual, and then natural release. Total hands-free cooking time from pressing the button to when the float valve drops is 15-20 minutes. Afterwards you can spice it up with a sprinkle of matcha, cookie crumbs (secret weakness), nuts, or even cereal (!). The result is a great bowl of steel cut oatmeal with a slight nutty flavor and almost "Q" texture to it that is an improvement over my previous go-to brand.
Overall, I would recommend Bob's Red Mill Steel Cut Oats as the gold standard for steel cut oats. They are high quality and are easy to use for a delicious bowl of oatmeal.

You’ll need 1/3 to ½ cup of oats per person (the label says a serving is ¼ cup, but if you ask me, that’s not nearly enough breakfast) and twice as much milk as oats. Put the oats in a saucepan with just enough water to cover them and a pinch of salt. Bring it to a boil, then turn the stove burner down very low. Add the milk and stir, cover the pan, and let it simmer gently for 30 minutes.
The trickiest part is getting the burner setting exactly right. If it’s too high, the milk will scorch or boil over, and if it’s too low, you’ll have undercooked oats swimming in a soupy mess of liquid. Get it exactly right and you’ll have thick, creamy oats that cook to perfection while you’re off doing something else. The first couple of times you try this recipe, you’ll probably need to stay near the stove and keep an eye on the oats, but once you figure out the right burner setting, they’ll cook by themselves without you needing to stir them or keep adjusting the temperature. (On my stove, the exact right setting is the notch on the burner dial between Warm and Low. Your results may vary.)
You can top your oats with any fruit, nuts, etc., you like, but my favorite version is apple-pie oats. After the oats have cooked for 30 minutes, add about ½ to ¾ cups chunky applesauce per serving, a generous sprinkle of cinnamon, and just a drop or two of vanilla—real vanilla, mind you, not imitation vanilla flavoring. Stir well and simmer a few more minutes until it’s hot. Sweeten to taste with honey or brown sugar. Apple-pie oats are high-level comfort food—try it and see.
Side note: You can get almost the same taste and texture of oats cooked in milk by cooking them in water and then stirring in a few scoops of dry Nido milk powder (https://smile.amazon.com/NESTLE-NIDO-Fortificada-Ounce-Canister/dp/B00FRFRZF6). Nido is made from whole milk, so it has a much better flavor than typical non-fat powdered milk, and the dry powder adds the taste and protein of milk without watering down your cooked oats.
