Bob's Red Mill Coconut Flakes
Full of flavor and makes a healthy snack
Due to the size of these flakes, they are lovely when used to decorate cakes and pies. Use them in granola, trail mixes, or just to munch on. They're unsweetened and sulfur free.
Bob's Red Mill Shredded Coconut
A naturally sweet addition
Use in baking, salads, granola, and in all your coconut cooking. This product uses Unsweetened coconut and is sulfur free.
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whip egg whites and a pinch of salt to soft peaks. Slowly stream in honey and continue to whip to stiff peaks. Fold in vanilla extract and shredded coconut.
- Portion 1 tablespoon per macaroon and space evenly on the prepared baking sheet; smooth tops if desired. Bake for 12 minutes, rotating halfway through baking time for even browning. Let cool completely before dipping in chocolate.
- To finish macaroons, heat chocolate and coconut oil over low heat until completely melted. Remove chocolate from heat and gently dip the bottom of each macaroon to about 1/4 of the way up the side. Place dipped macaroons back onto the parchment lined baking sheet and let set about 30 minutes.

- 4 oz Dark Chocolate
- 1 Tbsp Coconut Oil or Butter

Great quality unsweetened shredded coconut meat!

Packaging:- The product came packaged as depicted by the images on Amazon. The outside packaging was a nice sturdy cardboard box (different from the images on Amazon, but it really doesn't matter all that much) with 4 ziplock bags of shredded coconut meat. Each ziplock bag felt durable, but the single zipper felt somewhat flimsy (but I haven't managed to accidentally tear it from the bag yet, which is great news)Shredded coconut meat:- Appearance: The pieces of meat are rather white, without any noticeable discoloration or any abnormalities- Smell: Light coconut smell (very pleasant)- Taste: Light coconut flavor with a bit of sweetness (very enjoyable flavor)All in all, a great product (good source of healthy fats and dietary fiber, that's also low in net carbs) that I enjoy eating on it's own or in a variety different ways (smoothies, salads, baked goods, energy balls, etc.).
