Bob’s Red Mill Steel Cut Oats
Steel Cut Oats are simply whole oat groats that have been cut into neat little pieces on a steel buhr mill. We use high protein, whole grain oats that have been lightly toasted to create our hearty steel cut oats. Also known as Irish oats or pinhead oats, steel cut oats create a chewy, full-bodied hot cereal. Steel Cut Oats have always been a universal customer favorite at Bob’s Red Mill. Their robust oat flavor, texture and ease of preparation plus proven nutritious benefits and cholesterol reduction make them a perfect breakfast. A few years back we learned of the World Championship Porridge Competition in Scotland called the Golden Spurtle. At that point we had yet to discover the spurtle—a centuries-old Scottish wooden porridge stirrer. The Bob’s Red Mill team traveled to Carrbridge, Scotland to compete in the World Porridge Championship. We competed against fourteen other teams from around the globe. Our team’s belief in our consistently superior oats never wavered. That crisp October morning all teams paraded through town behind a bagpipe band. After three heats of competition, we remained one of five finalists. We all prepared a traditional recipe—oats, salt and water—for the judges. Finally, the announcement: Bob’s Red Mill is the new Golden Spurtle World Champion! Marionberry Hazelnut Oatmeal
In a small bowl, combine flour, sugar, brown sugar, salt, and nutmeg; set aside. Preheat a large skillet over medium-high heat. Add hazelnut pieces, and toast, stirring constantly, until they begin to turn golden and fragrant. Add butter to hot pan and stir with hazelnuts until butter has melted completely. Add flour mixture and cook, stirring constantly, until clumps begin to form and caramelize, about 3–4 minutes. Remove from heat and let cool.
Place berries in a small saucepan and add honey and lemon zest. Heat over medium heat until the berries begin to release their juices and the honey melts and incorporates evenly into the dish. Remove from heat and keep warm.
Bring 3 cups water and 1/4 tsp salt to a boil then add 1 cup Bob's Red Mill Steel Cut Oats. Reduce heat to a low simmer. Cover and cook 10 - 20 minutes (depending on how chewy you like your cereal). Stir occasionally. Remove from heat and let stand covered for a couple of minutes.
Divide oats into serving dishes and top with stewed marionberries. Garnish each dish with a generous amount of hazelnut crumble. Makes 4 servings.

- 1/2 cup Organic Unbleached White All-Purpose Flour
- 1/4 cup Granulated Sugar
- 3 Tbsp Brown Sugar
- 1/4 tsp Salt
- 1/8 tsp ground Nutmeg
- 1/3 cup chopped Hazelnuts
- 1/4 cup Butter
- 1 cup fresh Marionberries
- 2 Tbsp Honey
- 1/2 tsp grated Lemon Zest
- 1 cup Steel Cut Oats
- 3 cups Water
- 1/4 tsp Salt

Directions: Oats: bring water to a boil, add salt and cream, Cook 17-18 minutes, stirring.To toast oats, preheat oven to 350 degree F. Steel-cut oats are simply the hulled grain which is then chopped into a few pieces by a steel cutting burr. This is instead of being squashed flat by steel rollers, which results in the more commonly sold "rolled oats". Squash them even flatter and they are sold as instant oats, which are so fine they aren't too far away from being oat flour (which explains why they cook so fast).
These steel cut oats need to be cooked longer to get them cooked all the way through. Fully cooked, they are slightly firm (not hard and crunchy) in the center. I like to wash them with fresh water a time or two before cooking to rinse some of the oat flour off. This reduces the tendency for the oats to become sticky and gelatinous.
If you like your grains to have the taste and texture of grains instead of jiggly mush, then these are great oats!
SO much better than rolled oats!!
Our pantry has 1 and half huge boxes of rolled oats because we eat oats often and I make granola. Guess I'll be making much more now that steel cut oats have ruined our taste for rolled oats.
