We select the best quality foods we can afford and this includes coconut. This review is a comparison between the Bob's Red Mill and Tropical Traditions finely shredded coconut which I have been buying on their website - for some reason Amazon carries many of their products but not their coconut.

Here is my comparison.

Freshness- This item arrived with an expiration date of 3/2013, which is eleven months from delivery. I wish I knew what the exp date was on the TT brand - but it lasted me well over a year on my shelf and I believe that since they harvest the Coconut (they are primarily a coconut products company) it may have been fresher.

Price- I buy the Tropical Traditions in the plastic 3.5 gallon pail, which I buy online when it is half price at $17.50, which costs about $5 a lb.

I decided to compare it to Bob's Red Mill which I researched and felt was probably the highest quality on Amazon, so I got it with the Subscribe n Save, so I saved a little more. Without the Subscribe n Save, Bob's Mill has free shipping and currently comes to $4.38 a lb. I think Bob's Mill is priced well for what you are getting.

Shred size- is very close - but the Bob's Red Mill is slightly larger. I felt that the Tropical traditions was just a little too small for my taste. It "disappeared" in my cooking and oatmeal and I never got to enjoy the crunch or the chew of it, only able to enjoy the flavor and smell.

Dryness- both were equally dry and felt very similar.

Aroma- the Tropical Traditions won hands down here. The Bob's Mills smelled fresh enough, just a very mild slightly toasted smell. But the Tropical traditions has a much stronger sweet coconut smell (it is NOT a sweetened coconut product) which I find very appealing.

I saw this in a specialty market and was so impressed by the wide ribbons of white coconut that I disregarded the gazillion dollars they charged and bought a bag. At the Bob's Red Mill website, I investigated recommended recipes and found an enticing cookie recipe, then assembled the ingredients and prepared a batch of wholesome, chewy, flavorfully delicious cookies which we've been enjoying for a few days. I'd used home dried cherries and grapes (raisins) instead of the cranberries listed in the recipe, but otherwise followed it as written online and on the Bob's Red Mill 5 Grain Cereal bag. The coconut was so impressive that I immediately checked to see the Amazon price in preparation for buying more and after only a week, they now have it in stock at a much better price than the nearly five I paid for my first bag. The 12 ounce bag probably contains 3 hefty cups of coconut as I split it with my daughter and nibbled some before measuring it for review. She made fresh blueberry coconut ice cream with coconut milk and said this coconut was especially nice because the texture was more interesting than smaller shreds which she'd used in the past. Nothing is added to the Bob's Red Mill Flaked Coconut Unsweetened and that's just what I want! Toasted, it's even better when added to fruit and yogurt. I have it in my Amazon cart ready to order!

I have been using Bob's red mill unsweetened coconut for about 2 years now and it's great. My favorite use for it is as part oif a coating for chicken or fish. You just toast the coconut in a nonstick pan until nice and deeply browned and then mix it half and half with Panko crumbs or regular breadcrumbs. Dredge your chicken pieces in flour, dip in egg and then coat with the coconut & breadcrumbs. I bake mine in the oven but you can also deep fry. This coating is also excellent for shrimp or scallops. Since it's unsweetened, you can use it in carribbean stews or any other savory dish. For baked goods it's especially helpful in controlling the amount of sugar in the final product. Coconut doesn't really need to be sweetened when it's added to other sweet ingredients. For example, those 7 layer dream bars with chcolocate and butterscotch chips as well as sweetened condensed milk don't really need sweetened coconut now do they? I also add this coconut to banana nut breads, chocolate brownies and icings for cakes. If you are making a regular white cake with coconut icing, you can punch up the coconut quotient by trhwoing in a half cup or so into the mix and then some more into the custard filling and get triple coconut cake! Yum. It's not hard to toast this coconut but be aware that once it starts browning, it browns VERY fast and will continue browning even after you remove it from the heat. Once you have bought this and used it, you'll find a hundred other uses for it. try the coconut encrusted chicken for something different!

I could not find unsweetened coconut at any store in our area and wound up having to buy the case of Bob's brand from Amazon. Thank you Amazon for having what people need!

No surprises with the product. It is dried, finely shredded coconut just as advertised. Because it is so fine it tends to scatter around if you are using it to coat nut balls or truffles, and the kitchen looks like the recipe directions said: "First take one teaspoon of coconut and sprinkle it evenly over counter and floor"............ :)

I also use it to make coconut milk and that sure beats the heck out of buying a fresh coconut and going through the whole long process that I used to do years ago. It is great to be able to have just the amount of coconut milk I need at any given time without the unhealthy vegetable gums that come in all of the canned coconut milk I've seen.
