Product Description

Bob's Red Mill Vital Wheat Gluten is made from the natural protein found in the endosperm of the wheat berry. When combined with water it becomes highly elastic and taffy-like. Added to bread dough, it helps retain the gas and steam from baking and gives more volume to the baked bread. It can be especially helpful for baking breads made with coarse, whole grain flours and cereals.

After making bread for the first time and it sinking. I did some research and discovered that adding Vital Wheat and Gluten Flour would help the bread from sinking, so I decided to buy some, and I am glad I did. It not only keeps it from sinking it makes the bread light and airy. Less is more, I discovered that 1/4 tsp for 1 pound of bread works great. It does make a difference

It's hard to review a product that has not many characteristics to distinguish it from its rivals. But I trust Bob's products so when they're price competitive with another brand I'll trust, I'll choose them. Do keep it refrigerated after opening though or it may cake.

I started using Wheat Gluten about 10 years ago for Whole Wheat, Rye & Pumpernickel Bread and now I use it in every loaf of yeast bread that I make. My gauge is 1 tsp. of Vital Wheat Gluten for every cup of flour. It goes right into the bread machine with the yeast and I get great results each time no matter what flour I am using.

Make any flour bread flour by adding a couple of tablespoons per 5-cup batch of bread. Invaluable for giving whole grain flour extra rise, as it's gluten protein that works with yeast. I bake all our breads and wouldn't be without it in my kitchen. (Far fewer people react badly to gluten than they've been led to believe!)

I know there are a lot of people who fear the mere mention of the word Gluten, however there are a growing population of people who want high protein delicious meat replacement products. This vital wheat gluten is a wonderful wheat product that is used to help make normally yummy chewy breads and doughs as well as making a fake meat or meat substitute for vegans called seitan. Seitan is almost entirely gluten and super high in protein as well as deliciousness. This is a definite no no for people with celiac disease as well as dieters trying to stay away from gluten as this is exactly the opposite of low gluten food. Bobs red mill always delivers on high quality products, however they are a little pricier than other brands. I reccomend this product to vegans who are looking to make their own seitan or anyone else looking to add protein to their bread and wheat products.
