Cannabis Leaf Pesto

Much as in the chimichurri on page 157, weed leaves add vegetal vibes to this classic pesto. If you want to make things extra soigne, chilling the olive oil for a half hour in the fridge before adding it to the pesto helps the leaves stay nice and green while they’re being pulverized.

In a food processor, combine the cannabis leaves, basil, pine nuts, cheese, and infused olive oil and process all of the leaves all finely chopped. Season with salt. Use right away, or transfer to an airtight container and store in the refrigerator for up to 3 days.

  • 4 cannabis fan leaves
  • 1 ½ cups basil leaves
  • 1⁄4 cup pine nuts, toasted
  • 1⁄2 cup grated Parmesan cheese
  • 1⁄2 cup flower-infused olive oil
  • Kosher salt
