UPDATE: As it turns out, the nut does allow calibration. So now it works perfectly again. To reflect my happiness, I've added one star to give it a 5-star rating.
Actually, this thing is awesome when you consider that the alternative is drilling yet another dang hole through ANOTHER S/S kettle for a side-mounted thermometer. With this guy here, I don't need to modify the stock pot, I just use this clip-on thermometer and a 1-qt Pyrex measuring cup (measuring quart?) for my dough-in proteolytic/saccarification rests.
Someone else said it fogged up at 212 F. I didn't have this problem, but I don't see how it matters, seeing as though the laws of physics dictate that the temperature of liquid H2O can never exceed the boiling point (and that only boiling water is generally ever added for subsequent step infusions anyhow).
