How to make your own chai? Get a ginger root, cut off a couple of slices. Crush it a bit Make a big pot of tea and add a whole cinnamon stick, a tsp of black peppercorns, some whole cardamom pods, a tsp of whole cloves. Brew this together, simmering the tea on low in a cooking pot (I know, you aren't supposed to boil tea, but this is chai.) If you want more of a spicy flavor, you can buy Chai Masala in an Indian grocery, but I like the whole spices. After about 10 to 15 minutes, strain this tea and mix with whole milk or evaporated milk and some sugar and cook it a bit more. I use raw sugar and evaporated milk. It should be a bit strong, milky and sweet. You can chill any leftovers and reheat it.
Orange Pekoe is quite common as all the American Tea Bags (Lipton, Luzianne, etc.) use Orange Pekoe. I spend a lot of time in India and have come to greatly enjoy the Bombay Street Tea, which is always made using Black Tea.
SimplyBeautiful obviously has a problem in their warehouse: they've got the wrong carton in the wrong bin. Both times, I've reported this to Amazon and they promptly refunded; however, they would not contact the shipper and let them know they have a problem.
HOW DO I GET TAJ MAHAL BLACK TEA INSTEAD OF ORANGE PEKOE?
It arrives vacuum-packed in a foil (mylar?) bag which is not recloseable, but it's such a bargain it would be nitpicking to complain about the need to repackage upon opening. :)
