Galangal is the rhizome of certain plants in the ginger family. Although, at first glance, it might look similar to ginger, its taste and smell are vastly different. Galangal has a sharper, peppery taste and a strong citrus aroma; it gives a more earthy and citrus note to soups and curry pastes. There really is no substitute for good galangal. Dried galangal is to be soaked in water to soften the flesh and prepare it for cooking. There are two types of Galangal, the Greater Galangal (larger) and the Lesser Galangal (smaller.) The Lesser Galangal has a peppery flavor with a pine-like aroma. For use, either rehydrate in hot water or grind to form a powder.
