La Caja China World is the book I have been waiting for. We own a Caja China roasting box and for many many years we have only used it for two or three occasions per year.
Primarily for roasting a whole pig, Cuban style, Lechon Asado. Those occasions were Christmas, New Years, and for maybe a big family reunion. Other than that our Caja China collected dust the rest of the year until the holidays rolled around again.
Well not any more. Perry Perkins' La Caja China World cookbook has changed all of that.
I cannot begin to say how thrilled I am with his roasting box recipes cook book. It's the best book to have if you own a Caja China roasting box. Perkins has really outdone himself with this book. He features wonderful recipes from all over the world and fantastic authentic side dishes to go along these incredible meat, poultry and seafood dishes.
To mention a few Arni me Patates sto Fourno, recipe for whole roasted lamb and potatoes from Greece, delicious and succulent.
The Filipino Lechon, whole roast pig from the Philippines is simply amazing the pork is tender and is fall off the bone good.
Another most delicious recipe is the Argentine Grilled beef Tri-Tip, featured along with an incredible recipe for a perfect Argentine Chimichurri sauce. A wonderful medium rare Tri-Tip that simply melts in your mouth.
I am thrilled and love the countless incredible recipes featured. From the moment I received my book I was unable to put it down. We normally store our Caja China roasting box in our back shed when not in use. Well, since I received my Caja China World book, I had my husband put it out again on our back yard patio. I have made up my mind to try all these wonderful recipes to roast and grill in our Caja China.
Perkins writes with a calm and reassuring manner. He is precise in his description of cooking time, internal temperatures, thermometer readings, and details on grill levels and meat positions to achieve the best results.
He includes brief explanations at the beginning of each recipe of how the dish is traditionally served, and with what accompaniments the dish is consumed. He features 47 recipes from around the world each unique and an adventure in preparing and enjoying. He also advises what are the best wines to serve with these wonderful roasted and barbecue recipes.
Perry has researched all of his recipes and has all the instructions down to a science. His terminology is clearly understandable making it very easy for the average home maker to prepare these wonderful meals from all over the world, without having to have a special degree in cooking. This book is flawless - success!
From front cover to back and every page in between, this book is exceptional and a must have for the serious and not so serious barbecuer and griller alike.
Perkins is a chef and grill master with both skill and passion. I am sure whoever reads and tries the recipes in La Caja China World book will embark on an adventure of roasting and grilling recipes from around the world, just as I have.

I'm a freelance writer and work-from-home dad, born and raised in the Pacific Northwest (with a little time in Georgia.)I've written several books, including two novels, four cookbooks, and two short-story collections.
My father and grandfather were professional chefs, and I love to cook, grill, and barbeque. My favorite cooking equipment is La Caja China. I have three models, and love them all! Love to cook whole pigs, briskets, and pulled pork. We grill a lot of salmon in the PNW as well.
