The pieces have a very nice, heavy feel to them. I have a hard time imagining they would warp with use. We have used them with high heat and there is no observable warping even with a high flame applied to them. Food DOES NOT stick if you follow a couple of basic rules. You have to preheat your pan and use a little bit of fat, like butter or olive oil.
As far as there being "better" options, this is always true with anything. To the reviewer who cites All-Clad pans costing twice as much as a "better option", what about all-copper, heavy gauge French made cookware? That costs twice as much as the All-Clad, but is it a better option? I think this Calphalon set offers tremendous value at the price at which it is offered and produces wonderful, uncompromising results. I am very happy with Accucore and I will be purchasing more pieces.
I try and use mine with an inductive stove top, the nuwave ones that I can set the temp by 5 degrees. The pans track this to within a couple of degrees. Wonderful. So now I know what temp to cook at for each piece of food. If I want sunny side up eggs, I set it for 210 degrees and the eggs come out beautiful. 4 at a time, and they all come out the same. I can sear with these also very easy.
They are non stick if you do it right. What do I use, I use a coconut not stick organic spray, or I also user either butter or lard or tallow. Of course, all organic. I have even got these pans hot enough to cook french fries in. Wonderful.
As for the lids, I think they were designed not to fit closely. If they were, they would be called a pressure cooker. I would rather have the liquid boil over because I was stupid and did not use the right size pan or turned the heat up too much rather that have the lid explode off and hurt someone. If something is boiling over, then I am using the wrong size pan or the heat is too high and I did not pay attention to it. Water boils at 212 degrees, and you do not need to turn a pan up to 300 degrees to boil. It will boil off faster, but the water is still at 212 degrees unless under pressure. That is why I use a pressure cooker for that, to get the pressure up to 5, 10, or 15 atm. But that is why they have a safety feature and locking lids.Read more ›
