Although I had other obligations, my mind was elsewhere (sorry to my current gf), trying to decide what I was going to cook first when I got home. That moment came around 11 pm and I fired them up. You will probably need to re-learn your burner settings, unless you enjoy the flavor of burnt garlic. These pans can kick some heat, and do a fantastic job of browning, clean up easily, and just make you feel like an expert chef, even after burning garlic. My smugness level was an 11 last night.
I cannot discuss whether these are really an improved version of the contemporary or TRI-PLY versions as I haven't owned or used either of them. I was going to get the tri-ply initially, until I started analyzing how many pans I actually need. I am replacing a Calphalon non-stick set that is about 6 years old, and I currently do use every single pan to some capacity. But that is mainly because they are available, not out of necessity. You can purchase the 13 pc TRI-PLY set for $380 (at time of this posting), and the AccuCore is 10 pc for roughly $500, but did I really need a all those pieces? Is there any major advantage to have a 2.5 qt and a 3.5 qt sauce pan? 8, 10, and 12" omelette pan? I figured 'screw it' and upgraded to higher quality, fewer piece set. In actuality I purchased this 5 piece set, along with a 4 quart chef's pan, and an 8 quart stockpot (both Accucore as well) for just over $400. The only things I didn't get vs the TRI PLY set were redundant saucepans and skillets, as well as unnecessary clutter.
The ONLY thing that I've noticed (granted it's only been 24 hours), is the lids don't fit 'snug,' meaning you can wiggle them around just a bit. Doesn't seem to be a problem during steaming, but I'll update if this seems to be an actual issue.
All in all, purchase this set and you will be happy.
NOTE: In other reviews for these, people complain about sticking. Personally I think this is lack of cooking knowledge, as you should always add some type of oil or fat to the pan to keep this from happening, and/or your pan is just way too hot.
EDIT: Just noticed the price listed today is different then when I bought it last week. I'm even happier I got it for $377 with shipping. WOW!
A few keys that have helped me out when cooking are...one, make sure the pan is to temperature before putting in the protein. Two, use the proper amount of fat (oil, butter, etc.) in your cooking. Three, remember these conduct heat better than the normal non-stick pans. As such, it may take a few times to get it exactly right on where your stove top temp should be. I usually have mine a notch lower than I used to set it on my non-stick pans.
Just follow the directions, heat the pans to the proper temperature first and wait until they cool before you clean them.
