Excellent "Chicken" Fryer

I was going to wait to write my review, but I'm compelled to write it right out of the gate. After years of inferior cookware, I decided it was time to go back to using stainless steel. My criteria for the cookware is that it be tri-ply or multiply, layering aluminium between quality stainless steel, all the way up the sides. I refused to buy impact bonded cookware, or "non-stick" anymore. I decided on the 10 piece set of Cuisinart Multiclad pro cookware, after reading more reviews than I can count. The 10 piece set that's on sale here on Amazon for $139, is a steal. However, I still needed an additional saucepan and 12" frypan. I bought an open stock Cuisinart saucepan, to match my set, and almost bought the 12" frypan with lid, when I ran across this Caphalon 12" frypan. I couldn't find too many reviews on Caphalon's stainless steel Signature Series. However, I saw the multilayered construction, which is comparable to Cuisinart MCP, plus the weight was higher. I also noted that the solid handle is attached by 3 rivets, not 2. Amazon also has this pan on sale for $55, down from $80. The last thing that made me buy this pan, is that the sides are more slanted. I'm sure that this is important for omelets, but it's crucial for frying, if you want your food to come out crispy. The slanted sides allow more steam to escape the food, unlike sides that are more vertical. If you look at an All-Clad frypan, you'll see this angle. So, given all of these factors, I ordered this pan. I received all of the cookware today, and I put it through some paces. The first thing to note is that the Cuisinart MCP pans are actually a bit thicker than this Caphalon pan, which surprised me. But, the quality is there so I put it through its paces. My husband loves fried chicken, so I cut up a LARGE bird and fried it. Honestly, I should have fried some pieces, then put more in the pan, because I crowded the pieces in this pan, as big as it is. If you've not cooked with stainless, or if you're like me and it's been 20 years, you have to cook differently if you don't want things to stick. You MUST PREHEAT the pan BEFORE adding oil or butter. I did so using less than medium heat on my gas stove. When a drop of water skittered across the surface and evaporated, I added my oil. Even when frying with a lot of oil, like fried chicken, the juices will stick to the bottom. This is normal and good stuff! This is how you eventually make gravy folks, and it's not a problem with the pan. The breading doesn't stick, but these drippings should be golden brown. Even with overloading the pan, the pan heated evenly, recovered temperature quickly, and for the first time in many years, properly cooked the chicken. This is the highest quality frypan I've ever owned, so the end product was, as my husband of 34 years put it, the best fried chicken I've ever made. Interestingly, I've always had a problem with my chicken browning too much before cooking all the way through, although I constantly adjust the temperature. This time, I just adjusted the flame a tad once, and that was it. The chicken was done through and through, with the prettiest, golden brown, and CRISPY breading. The breading never stuck to the pan, but the juices did, so I just gently loosened the chicken from them before turning. Those drippings never turned too brown or black. They were golden too. After draining almost all of the oil, except for ~ 2 tablespoons to mix with flour to make gravy, every bit of those goodies mixed with the chicken broth that i used to make the gravy, making the perfect pan gravy. After dinner, I just washed it up in the sink. It cleaned up like a non-stick pan. So, to fry successfully with this, or any quality stainless steel pan, remember to preheat your pan, until a drop of water dances across the surface and evaporates, then add your oil, shortening, or butter. Cook at no more than medium heat, but you'll use medium low more than not. I will update this review if needed.

This skillet has a flat bottom that can be used on a glass top cook top. It can go hot enough to sear a steak well without warping, and it can go in the oven to finish the inside of a steak or burger. Calphalon is wonderful because they actually emboss the bottom dimension of a skillet on the bottom of the pan. This one is 12 inches and clearly says 12 inches. So many skillets and pans say 12 inches, etc., but the actual bottom diameter is much smaller. I would have bought the Calphalon Tri Ply 12 inch but it's sold out everywhere. I have their 10 inch skillet. This one is as good or better than the Tri Ply.

I really like how easy to clean these pans are. I have used either teflon or ceramic pans in the past and it could be a challenge getting some of the tougher "stuck on" foods cleaned off without damaging the non-stick coating. Yes, that means this pan can have some sticking issues, but only if you don't allow it to heat up thoroughly before starting to cook your food. Let the pan get nice and hot before putting in your cooking spray/oil/etc, then the sticking issues stay to a minimum. I love being able to run this through the dishwasher, using scratcher pads, not having to worry about what sort of cooking utensil I'm using, etc. One star off because the food does sometimes stick, even when letting the pan get hot enough, but not any more so than the so-called "non stick" pans I was using before this.

I love this pan. This is the second Calphalon Signature Series. Item I have. It is so much nicer than other stainless steel pans. Sturdy, balanced. I’ve had some cooking oooops’s in it. My daughter burned avocado oil in the bottom and I didn’t think I would get it off. After reheating pan on stove and a bit of scrubbing and a bit of barkeepers friend, it all came off. My pan still looks good and no problems with other cooking. I’m hard in my pans and Signature Series does not disappoint.

If you are looking for a rest of your life stainless pan then this is it. Probably nit picky but my only complaint is 2 rounded bolt holes at each end that are a little difficult to clean. The upside is basically everything else you want from a pan. It heats well and evenly (I use gas if it matters) it is easy to clean and I don't feel the need to baby it at all.

Great pan, but like all stainless, you need to know how to use it. Preheating is absolutely manditory. If you're one to start cooking as soon as you turn on the burner, stick with a good nonstick. But I've been able to clean this pan in my relatively small dish washer, and occasionally use steel wool if I burn something. I've made some really good omelets in this pan since I bought it.

It is not coated with toxic chemicals which of course means I have to wash it with a plastic scrubber but a spray of coconut oil before and a few minutes' soak after guarantee very little effort is needed to clean it beautifully. I use it every other day and only put it in my dishwasher once every two weeks to clear the slight build-up on its backside. I whole-heartedly recommend this to everyone and after I fell in love with mine I gifted my daughter with another one. ♥

Stuff does stick to it if you aren't careful, but it's a sturdy and well made pan. The pan is heavy. It's not too comfortable to hold it with one hand, and the handle on the opposite end does get really hot. Despite that I don't regret getting the pan; it's large so you have to expect it's going to be pretty heavy.

I like the fact that it's stainless steel, so you don't have to worry about stuff leeching into your food

This is a great pan. Heats up very hot, so keep heat a bit lower than you usually would. Heats up fast, too. I haven't quite figured out how to make it non-stick yet. You add oil once the pan is hot, not before, and pour out excess once the pan is coated. Good weight, easy enough to handle with one hand. Eggs stick pretty bad. I can scrub it off with a little baking soda. Happy with it so far, but still have a lot to learn.

The pan is very high quality, heavy and looks like will last forever. When using on traditional electric stove it takes lots of time to heat up and controlling the temperature is not easy, but after some learning curve the results are very good. Also, when used correctly it's very easy to clean.
One extra note is that it's not deep, so less suitable for cooking large amount of pasta with the sauce or anything else that requires tossing larger amounts of food.
