-- Take the chill off foods. Remove foods from the refrigerator 10-15 minutes before you start to cook.
-- Pre-heat over medium heat. Don't try to save time and preheat on high. It only takes a couple of minutes to preheat Calphalon cookware at the proper temperature to help prevent sticking.
-- Try the butter test. Pre-heat pan on medium, then test by rubbing a teaspoon of butter over the inside of the pan. When the butter begins to bubble briskly, it’s properly preheated. The first thing I tried was an omelette - let the pan heat up first, did the water droplet test, added a little butter, then the eggs... when everything was done the omelette slid right out. We have done lots of other things and everything has cooked nicely.
Cleans up very easily as well. I will say that the 'Bar Keepers Friend' cleaner is a necessity though. I clean the pots and pans with normal dish detergent and a sponge which works well, but sometimes there will be slight discoloration or stains as some have mentioned in other reviews. But I just add a little of the Bar Keepers Friend cleaner and it removes the discoloration/stains very easily and also polishes the stainless steel nicely.
Overall we love this product and can't believe we waited so long to switch from teflon to stainless steel.
I was worried about the handles and lid handles getting hot on the stove. Not a problem. I was worried the about using lids when draining the pan. Again, not a problem.
These pans are a dream to use. They are a good weight, clean up well and look great. The graduated measuring on the side is a nice extra. I took all my old cookware and gave it to a thrift store.

I did a little cooking this morning with it. I put some bacon in the big skillet and put it on a low-medium heat on my gas stove. The bacon cooked up nice and crispy, like I like it to be. Then, I cooked a vege-cheese omelet right in the bacon grease, after I removed the excess from the pan. The omelet came out very nice and tasted good. The bacon, definitely good, but not nearly as good as it tastes from my cast iron skillet. Why that would be, I don't know, but it was noticeable. Very curious.
After breakfast came the cleaning up aspect. There was a bit of food residue in the bottom of the skillet, but it really wasn't too hard to remove, since I had poured about six ounces of hot water in it, after I was done cooking. I just used soap and water and a little Ajax cleaner and it came pretty clean for me, overall, but left some spots on the bottom, so I boiled some water in it, added some salt to the water and let it sit for a few minutes, before cleaning I out again with dish soap and a scrubby sponge. That did it.
After all that, I did a seasoning on all the pans. The small and large skillet and the saute pan. Just added some coconut oil and got it smoking a bit, then wiped it out. I'll update this review on further use.
