- Take the chill off foods. Remove foods from the refrigerator 10-15 minutes before you start to cook.
- Pre-heat over medium heat. Don't try to save time and preheat on high. It only takes a couple of minutes to preheat Calphalon cookware at the proper temperature to help prevent sticking.
- Try the butter test. Pre-heat pan on medium, then test by rubbing a teaspoon of butter over the inside of the pan. When the butter begins to bubble briskly, it’s properly preheated. If the butter begins to brown, the heat is too high. Carefully wipe the pan with a paper towel, lower the heat, wait a minute, and try the butter test again.
- Keep your cookware clean. Residue from previous cooking or aerosol cooking sprays is a common cause of sticking.

The rack, however, is non-stick and worked beautifully yesterday. I sprayed the rack with Pam (only the rack!) and it worked beautifully and cleaned up like a champ. I did put the rack in the dishwasher just to make sure nothing remained in any of the nooks an crannies. If there is one slight complaint it's that the rack does slide forward and backward in the pan. This isn't a problem with smaller roasts, but it can prove a bit cumbersome (even dangerous, in my opinion) when roasting a 20+ pound turkey. For this reason, I also bought myself the Cuisinart mult-clad 16 in roaster, American's Test Kitchen's 2nd choice), for making big turkeys as the rack on this one is much more snug. The price of $47 for the Cuisinart pan was just too good for me to pass up.
Okay, back to my Calphalon. I received it Saturday, and yesterday morning, I roasted a 6 pound leg of lamb. When it was done, I made a reduction of red wine au jous. It was amazing, but here's the point--many reviewers have complained about the inside of the pan on the bottom is slightly raised, creating a slight trough around the perimeter for the juices to flow into. The complaint was that you can't properly deglaze and make a sauce. To this is say, "Nonsense!". My deglazing worked perfectly, and my sauce was outstanding. I had no issue whatsoever. Love the pan!
And here's a tip...
After just using the pan one time, I almost freaked out when after I cleaned the pan, there were these cloudy whitish spots that I couldn't get out no mattter what I did. Do I need to send this back? Should I contact Amazon? Is the finish coming off the pot? None of these was the case. After a quick google search, I discovered that these were simply some mineral deposits that can occur after cooking. I used a few drops of Barkeeper's Friend (Get this--it's amazing!!!) and the spots disappeared like magic restoring my pan to its previous glory.
I really believe you will be as delighted with this pan as I am.
Final point: For those interested in the Cuisinart multi-clad I mentioned, it also just arrived, and like the Calphalon, it's gorgeous, The differences are: 1. It's significan't less expensive, 2. The bottom of the pan is completely flat inside, which might be important for you. 3. The rack is not non-stick, but it fits more snugly. Also, the handles of the rack line up with the handles of the pan, so removing the pan from the oven will be more stable with heavier foods as you can (carefully, with mits), grab onto the handles of both the rack and pan at the same time.
At 4 a.m. Thanksgiving morning, I drove to our garage where the turkey was, brought it back to the kitchen and realized it was NOT going in the rack. No sweat, they never do at this size. I place 5 or 6 large carrots along the bottom of the pan and they held the turkey up nicely as well as aiding in making delicious stock. The pan handles like a dream, it is so solid, with sturdy handles that are easy to grip. After removing the turkey using my huge lifters, I then poured off the drippings into my OXO Gravy Separator (You MUST get one!). I then added proceeded to make the gravy on my 15-year old electric stove, over just one burner. Perfection. The simple center drop in the pan made no difference using a good whisk, and the heat conducted beautifully. Great surface area and I made my best gravy ever.
Were this a smaller bird or any kind of other roast, the sturdy rack would've been great. However, it does slide much more than I expected when it is empty in an empty pan, more so than the Cook's Country review implied. I am extremely pleased with this pan, and just removed a 26# Tom from the oven. The entire bird settled nicely onto the "carrot rack" in the bottom of the pan. I think this is an excellent pan, but especially if you have large birds and don't want to go to a commercial size pan-- which needs a commercial sized oven-- this should please you.
