How to Cook with Nonstick
Never use cooking spray. Aerosol cooking spray leaves a gummy residue that is difficult to remove, and that residue will cause food to stick. Instead, use an oil mister filled with olive or vegetable oil, or dab a bit of oil on a paper towel and carefully wipe the interior of the pan.
Use the correct heat setting. Use low heat for warming, simmering and preparing sauces; use medium heat for frying, grilling, sautéing, searing or stir-frying; use high heat for boiling or reducing liquids.
Preheat the pan. Nonstick cookware can take a minute or two longer to preheat compared to aluminum or stainless steel cookware. For best results, make sure your nonstick pan is heated to the proper temperature before adding food.

But I was running out of cookware to shop for <grin>, and began tracking several with the plan of buying the first one that came on at a great price.... I tracked both All Clads, and this one. I almost bought the large All Clad, but discovered they didn't qualify for the Amazon promotion, so that blew that!
Then this one came up at $29.99 and I jumped all over it!
I have done beef steaks, pork steaks and salmon on it with excellent results. Cleanup, though not a breeze, is quick enough. Cooking residue tends to stick tighter on either side of the rounded ribs, but I have yet to need anything more than a little dish soap and hot water on a terry dish cloth.
One caveat - I seriously doubt those with solid top Electric Ranges will be satisfied with this pan. The bottom is not smooth, but rather follows the ridged cooking surface - in reverse. I am not familiar with these ranges, but understand a perfectly flat surface is essential to successful cooking.
Now I'm thinking about the 11" square griddle....
Years ago a friend gave me a very expensive, gourmet quality cast-iron grill pan, but it took two hands to lift and needed a lot of care, so I wound up giving it to an energetic young man who grilled a great deal, and he was thrilled to have it. I don't know what prompted me to try another grill pan. But I read the reviews and asked a question or two, and decided to give this one a try.
The pan arrived 2-3 days after I ordered it. It's a nice weight - sturdy but not too heavy like cast iron. I read the instructions, washed it in gentle liquid detergent, dried it and rubbed a little canola oil onto the ribbed cooking surface with a paper towel. This only has to be done once, before first use.
This is a generous pan. It could handle 3-4 chops, or a large sirloin, or two grilled sandwiches. I had only one little personal-size New York steak, so I preheated the pan for several minutes on medium until the rim felt hot, then put on my seasoned steak. It sizzled - a very satisfying sound which never happened with the toaster-broiler. I gave it 3 minutes on a side (I like it pretty rare) and removed it to a plate to rest for ten minutes. Beautiful grill marks! Evenly cooked, juicy and tender. And so easy! Later, when the pan had cooled, I could have popped it in the dishwasher, but it took only a few seconds to handwash with a non-abrasive Dobie and prop it up in the dish drain.Read more ›
Cons - Like all nonstick, can't use high heat.
I've only had this pan a week, so I'm not sure how well it will hold up, but it's performed excellently so far. I used it to sear a whole beef tenderloin (before transferring to a roasting pan for the oven). The instructions said to avoid high heat, so I seared it over the equivalent of medium high heat on my 22K burner. The roast browned beautifully and I got good grill marks in the center (not as much towards the corners, but maybe because I didn't brown long enough).
Clean up was a breeze, with a couple drops of dishwashing liquid, hot water, and a soft bristle brush to scrub lightly.
I've also fried bacon, and the square shape makes it easy to pour out the rendered fat.
It's been easier & faster to preheat this pan than to preheat (& later clean) my range's grill burner, so I think I'll be using this more often than my grill burner.
I like it's lightweight feel, it's much easier to carry when laden with food than my previous Calphalon nonstick 12" saute pan (which always felt heavy & "tippy"), but it can fit just as much due to its square shape.
The handle truly stayed cool even when used to sear the tenderloin, and the round shape makes it easy to grasp (unlike the more flat handles of other pans).

If you're a novice, order the indoor grill cookbooks that are offered on Amazon. Extremely cheap and helpful. I picked up 2 based on the ones with "top" reviews. I'm very happy with my purchase.
Put 2-3 drops of EVOO (if you must) on your pan, use a paper towel to disperse across the ridges before heating. If you marinate the veggies in salad dressing, etc. stuff that's oil based, then for sure use no extra oil for cooking. Last time we used NO oil, just salt, pepper & Mrs. Dash Garlic & Herb when done.
We don't heat our pans up to a high heat. I go medium high and monitor keeping it cooking by adjusting the temp as necessary. That works well for me.
We have a pecking order for what to put on the grill and when. If there's chicken, it goes first, we slice it thin and it's done quickly. Then the zuchinni, asparagus, dry veggies like that. When that's done to suit us, we put on the wetter veggies like tomatoes, mushrooms (whole), and we tried some pineapple on there too. We do all of this in a matter of minutes so keeping things warm is not a problem.
Most important thing I've found ... don't be tempted to keep moving stuff around on the grill pan. It's fun but by doing that you don't get the grill marks. Let it be ... it cooks so much better and looks really neat when it's "starving for attention." HA!
