- Take the chill off foods. Remove foods from the refrigerator 10-15 minutes before you start to cook.
- Pre-heat over medium heat. Don't try to save time and preheat on high. It only takes a couple of minutes to preheat Calphalon cookware at the proper temperature to help prevent sticking.
- Try the butter test. Pre-heat pan on medium, then test by rubbing a teaspoon of butter over the inside of the pan. When the butter begins to bubble briskly, it’s properly preheated. If the butter begins to brown, the heat is too high. Carefully wipe the pan with a paper towel, lower the heat, wait a minute, and try the butter test again.
- Keep your cookware clean. Residue from previous cooking or aerosol cooking sprays is a common cause of sticking.

I also own the Cuisinart Wok. I wasn't entirely happy with it and decided to buy the Calphalon Contemporary. The Cuisinart is O.K. but doesn't conduct the heat as well. It is much lighter than the Calphalon and it also cleans up easily with Bar Keepers Friend. It is about $30 cheaper than the Calphalon and the Cuisinart comes with a lid. Unfortunately, my stove is a smooth top electric. Stir fry cooking with a wok works much better on a gas stove.
The amazing part of this purchase was I ordered it on a Friday afternoon, it was delivered the following Sunday and it was Easter. I did not purchase any special shipping arrangements. I went for the free shipping. It was packaged perfectly and the bottom line is, I am completely satisfied.
I was scared that the flat bottom would be too flat to scoop/stir fry. Not. It's totally perfect. I bought a steamer rack (a 10" i think) from Amazon and use it a lot for steaming or warming buns, etc. My largest 12.5" All-Clad lid fits inside good enough. To me, the outer finish is not as dull as the pic. While mine has a brushed stainless appearance, it still looks great hanging along side my polished SS All Clad cookware.I hang it by the short handle for easy reach. The only drawback to me is that it doesn't reach the extreme high temperature that my carbon steel wok did, of course. But it's maintenance free, dishwasher safe-yay, zero off-taste in food. Very satisfied.
3/16/2011 Update: I've had this wok for over two months now. It's holding up great and I still can't find any flaws. The clean up is unbelievable! I barely have to use any dish detergent or sponge! Everything just washes off with a quick rinse. I'm so glad that I got this wok (just wish I had gotten it sooner)!
