I've had a set of Chicago Cutlery steak knives for years, and while I was okay with them, I was also ready for something new. Something more modern looking. Something without a wooden handle.

I didn't want to spend hundreds of dollars on a set of steak knives, but I did want a decent quality set. I started looking at all-metal sets, but the handles often looked too thin to hold comfortably. Then I found the Katana series. The shape was appealing. The price was on the high end for me, but not exorbitant. The smooth blade with the serrated tip intrigued me. (I know knife purists are gasping, but I just don't care - I want a decent knife that works not an heirloom.)

And the verdict after using them for a while? I like them quite a bit. They look great. They're sharp. The handle is a very comfortable shape - more rounded than I thought it would be from the picture. The polyresin gives a good grip even with wet hands. They seem to hold their edge well enough.

I know that good knives and dishwashers don't mix for a variety of reasons, but my one pie-in-the-sky wish is that I could throw them in the dishwasher (not at all recommended and will void the warranty). However, they do at least dry off better than wood-handled knives. I would consider buying other knives in this line.

I have owned the Calphalon Katana kitchen knives for a while and love their style, feel and quality. While these everyday steak knives are not the same folded steel of the kitchen knives, I'm pretty sure that would have put them into the $100 range and an overkill for something on my table. Having used these a number of times, I am pleased with the overall quality of the blade, the feel of the handle and, as with the kitchen knives, the style if very cool. They make a great addition to any table regardless of everyday silverware or fine silver for a formal dinner.

I found the knives to be sharpened with one cutting edge on one side.

i wrote and asked if this was a manufacturing mistake that there was only one edge and the other side was flat.
you cannot cut straight down as the knife twists toward the cutting edge.
you cannot sharpen the knives with a good sharpening machine as it ruins the edge angle.

These steak knives are fantastic...sharp, well-balanced, and they look great. They are the perfect compliment to the Calphalon Katana chef's knives. I only have one minor complaint -- they come in sets of 4. Four is not quite enough for entertaining at our house, and eight are too many. Still I highly recommend these knives!

I have the Calphalon Contemporary set for most of my kitchen knives, and I love them. After reading reviews for those steak knives though, I decided to upgrade to these, and they are great! Sharp edge, cuts clean and easy with fuss. You know, the way a knife should cut.

I recently purchased the Calphalon Katana series complete knife set and they are awesome. Not only are they the shapest knives I have ever owned but they look and feel great in you hand. Once I found out about the steak knives I had to have them and guess what they follow suit. They are sleek and super sharp. The serrated tip cuts through any meat like butter and the rest of the straight edge slices anthing to paper thin slices with ease. I love these knives and they are worth the investment.

Got these in 2007-love them. They cut really well and have kept beautifully. I don't put them in the dishwasher but they are easy to hand wash. Have received many compliments from company on these knives. Fit easily in my knife block. Sleek looking and functional.

We actually purchased four Katana's and four Zwilling Pro's and did a bit of testing. The difference is clear, and obvious--the Zwillings are much sharper, and cut meat better and smoother. The Zwilling Pros also cost quite a bit more, but if you have made the leap to go beyond your average knives to something specific, you might consider going on to the better product.

The Katanas are pretty, though they do not have the "watered steel" look I was expecting. They are an elegant looking knife with simple, and somewhat unusual lines. Nice weight, though not as balanced as the Zwilling Pro's. And the difference in edge is really stark; I was very surprised.
