--Take the chill off foods. Remove foods from the refrigerator 10-15 minutes before you start to cook.
--Pre-heat over medium heat. Don't try to save time and preheat on high. It only takes a couple of minutes to preheat Calphalon cookware at the proper temperature to help prevent sticking.
--Try the butter test. Pre-heat pan on medium, then test by rubbing a teaspoon of butter over the inside of the pan. When the butter begins to bubble briskly, it’s properly preheated. If the butter begins to brown, the heat is too high. Carefully wipe the pan with a paper towel, lower the heat, wait a minute, and try the butter test again.
--Keep your cookware clean. Residue from previous cooking or aerosol cooking sprays is a common cause of sticking.

Pros: Very strong construction, love the triple welded handles. Covers fit snug and also well made. Very solid feel, they are not light weight. Heat distribution is VERY even. They clean up very nicely, and look professional grade. We are very happy we made this purchase!
Cons: Only drawback for us was the narrow design of the handles. The weight of the pans, plus adding in ingredients, makes the narrow handles dig into the hands a little. We resolved this by purchasing after market, slide on handles, that make them very comfortable. Don't be afraid of stainless steel. It just takes some getting used to if you're used to non-stick. Pre heating is a must. Allowing the pot to cool before rinsing is too (a rule we didn't follow, hence our warped cookware). For the bad reviews who say cooking an egg is an impossible feat in a stainless pan, it is just not so. See the pics for proof. If a pan is heated properly, nothing will stick to a stainless pan.
I had this impression that stainless steel was a nightmare to clean. It is not. This stuff is as easy (somehow) as nonstick. We do grease the material before using, and it just cleans right off. My wife has been begging for some new cookware and I guessed on this one based on reviews. I could not be happier, neither could she.
BTW - one of my favorite things of this cookware is the build. The material is heavy. It is solid. It just feels so "right" when using it. It feels solid, sturdy and quality. It just makes you feel you're cooking with good stuff.
