With 429 square inches of cooking area, there's plenty of surface area for a filet of salmon, a rack of ribs, or a couple whole chickens.

The Camp Chef SmokePro SE came up on Woot.com (an Amazon-owned site) and I was really, really surprised that the reviews for an entry-level smoker were very good, across the board. For just over $300 shipped I thought sure- why not. Pulled the trigger.
I've had it for right at a year as of the time of this review, and I absolutely LOVE IT. Normally I am of the opinion that you should overspend to get the better product, but I am 100% satisfied with the SE. I've gone through almost 200# of pellets in a year and I've successfully smoked three briskets, pork in various forms, a bunch of whole chickens, salmon, and probably some other thing I'm not thinking of. The show-stopped for me is bacon-wrapped dove breasts. I smoke them for an hour and then finish them on my grill. They are out-of-this-world amazing.
If you're thinking about getting into smoking, I say just pull the trigger and go for it. All you really need beyond the SE is some pellets, a good probe thermometer and then a good instant-read thermometer. Your additional startup costs should be less than $100, and you'll be off to the races.
Part of me wishes the SE had some inherent flaw, because that would let me splurge and get a nicer machine, but honestly there is absolutely nothing about this smoker that makes me want to get a bigger/better one! I love to use it and my family loves what comes off of it.
One tip: get a black teflon oven liner and cut it to fit the large drip tray that sits under the grate. You'll know exactly what I'm talking about if you get one. It's a $5, 60-second modification that will save you a ton of time and messy hands later.
