I'm using a ThermoWorks "Smoke" thermometer to send smoker temp info while I'm busy doing other things. So much easier to set it and not having to worry about it compared to grilling over charcoal (although I still like to do that for high temp California "BBQ"). Just come back when it's close to being done to give a quick visual check compared to the probe temperature. May consider adding the sear box in the future.
Okay I started the grill up let it run at 350 for 30 minutes to ensure all manufacture residue, oils, and paint is burned off, I tested the internal temp to make sure the temp was accurate, My first project was 3 racks of St Louis ribs and a 12lb brisket, I put the meat probe in the brisket and tested the accuracy, it was 1 degree lower than my thermo pen reading, I set the grill at 250 degrees and let the smoker do it's job, when the ribs and brisket got to the temps I wanted I wrapped them up in foil and continued cooking until they were at my finished temp, the ribs were delicious meat fell off the bone when I ate them, The brisket was perfect, I sliced it up, it had a nice smoke ring and just a slight tug and the meat pulled apart, I would say this smoker is as good as any competition smoker.
The smoker is great. (5 stars) Assembly went well. It's pretty straight forward. Operation is easy as well. Just set and pretty much forget it. This is a large smoker. If you need space, this is the one for you. This is my first pellet smoker so I can't offer any comparison to others. I've used a Brinkman horizontal smoker for the last 20 years that has worked well but it was a pain to keep the smoke and temperature where you want. The constant tinkering was getting tiresome. The ease of use of the Camp Chef makes things so much more enjoyable.
My experience with the seller has not been as pleasant. The Amazon product page indicates these are sold by Outdoor Cooking. Outdoor Cooking is listed on the Camp Chef website as an online sales partner. My order was not fulfilled by Outdoor Cooking, it was fulfilled by "deguns" (2.5 stars). I received my grill via UPS. The box was in rough shape, but still intact. The grill itself had some minor damge. I sent a message to the seller thru Amazon. They're response was basically, contact Camp Chef, if you have any issues we can contact them also. Not really the kind of response I was expecting.
I did contact Camp Chef (5 stars) and they were very helpful and were able to help me to my satisfaction. If I order any accessories for this in the future (really want the sear box) I will most likely order directly from Camp Chef or one of their online partners.
