How to Cook Cannellini Beans

The first step in making any dish with these beans is to cook them in the right way. You should start with soaking them.

  • Soak them for at least 4 hours, up to 12 hours;
  • Pour out the water, rinse them thoroughly, and add 3 cups of fresh water per each cup of beans;
  • Let them boil for 10 minutes, lower the heat, and let the beans simmer for 1 to 1 ½ hours. If you wish, you can skim off the foam;
  • Salt should be added during the last 10 minutes of cooking. The same concerns acidic seasonings;
  • Add bay leaves, onion, garlic, and other spices at the beginning beginning of cooking.

How to Enjoy Cannellini Beans

The Italian and Latin American cuisines can offer various ways of cooking these beans. While simmering, the beans absorb the flavors and smells of herbs, spices, and other seasonings.

Here are some ways you can cook them:

  • Make the beans the basis of salads. Sauté some onions and red peppers, mix them with the beans, and add some parsley;
  • The beans are the best ingredients in soups and stews, as they match well with all vegetables;
  • Mashed beans can be used as snacks. Take equal portions of cannellini beans and green peas and blend to create a beautifully colored spread;
  • Combine the beans with mint to create a new taste sensation;
  • Use them with fruits in fruit salads and add small portions into smoothies to thicken them;
  • These beans make healthy, nutrient-dense, and delicious side dishes. Toss them warm with fresh rosemary and garlic and enjoy an unusual mix of flavors;
  • Make burgers with the beans instead of meat: blend a mix of them with spices and vegetables. Form burgers from the paste and either roast them in the oven or grill them;

Great Deal, But Some Imperfections

Great Deal, But Some Imperfections
I make a lot of salads that involve using these beans. This is a really good deal in terms of price, but there are a lot of imperfection. Some of the beans look old, darkened and wrinkled. Look at the picture I have uploaded for just a few examples. The deal is still good enough that I'll probably buy again and just separate the imperfect ones, but you should still know about the quality before ordering.

Tried my first batch today. Very fresh, cooked very quickly (an hour or so after 4 hour soak). Nice and creamy. Product of the USA, according to added glued-on external label, so perhaps they have multiple sources. A great deal compared to $10+ For a 24 oz bag of Bob's Red Mill which I would rate as 5 stars too except for price. I'll definitely buy these again.

Delicious!! These have become a daily staple! I make a big batch and they seem to end up in everything and do very well!! Good quality - I have not found discoloring, broken beans or stones. Nice, uniform and as expected. My first try, I overcooked them and discovered they make a lovely and much easier/healthier substitute for mashed potatoes!! Of course, I found that longer soaking and shorter cook time will cook them perfectly. (don't add salt until the very end) They hold their shape well in sauces and casseroles. Highly recommend this addition to your family's pantry!

We like making mediterranean dishes with Cannellini beans and they are hard to find in our area. They are usually only available in the specialty/organic aisle and a small 12 oz bag will be over $5. These are of comparable quality and the price per pound is very reasonable. Tip: soak overnight and cook in stovetop pressure cooker for about 8-10 minutes and they are perfect! (may need a little longer for instant pot as those are lower pressure).

Dry Cannellini beans are hard to find, so when I found these on Amazon I took the chance. I was very pleased with the quality of this product. The packaging is very good, sealed with a zip closure so they don't spill all over when done using. I cooked up a batch to go into a kale soup recipe I have, they cooked up very quickly for a dry bean, (I did soak them overnight) and had a very good flavor.
I recommend this product for those looking for Cannellini beans.

This is the second product I've purchased from Food To Live, the first item being several bags of mustard seeds. They are of the highest quality and at an excellent price so when I saw the Cannellini beans from the same vendor, I didn't hesitate to purchase them. I gave them a good once over when they got here and the beans are again, like the mustard seeds, of the highest quality and at a very decent price. I'll be back for more, no doubt what so ever.

Great beans at a great price. They swell up quite a bit in cooking, so prepare for a full pot! I add a bunch of herbs from the garden while they cook, but the flavor is nice and beany without a lot of help. Splash of olive oil on top and a side of bitter greens in garlic oil-- heaven!
