Cassava Flour: A Gluten Free Substitute

​Grown and processed in Brazil, packed in California, and soon to be in your kitchen. Anthony's Premium Cassava Flour is certified Gluten-Free and acts great as a thickener for soups and gravies, or can be used as a flour substitute in Gluten-Free baking recipes.

Here's a little glimpse into the life of our Cassava
First, the Cassava Root (from the Manihot esculenta plant) is plucked from the ground in Brazil. The roots are then washed, peeled, inspected and grounded into a fine flour while allowing time for drying. Each batch is then lab analyzed to make sure the Cassava Flour is free of microbiological contaminants. After that, the Cassava Flour is packed and delivered to Anthony's for packaging into our lovely and vivacious resealable pouches. It's batch Tested and verified Gluten Free.
Additionally, our Cassava Flour does not contain or come in contact with any GMO products, as our Cassava Flour is produced from cassava roots that are free from GMO!

Great Wheat Flour Substitute- Cassava Flour can often be substituted in the same proportion as wheat flour in breads, cakes, cookies, and doughs. It can also be added to soups, gravies and sauces as a thickener!

Anthony's Recipe- Cassava Flour Pancakes

Craving pancakes? Try these amazingly fluffy pancakes made with our cassava flour! You won't believe how perfect they turn out without any gluten or grains!

The coconut sugar sweetener in this recipe lends a slightly crispy exterior to the pancakes and rich, slightly caramelized, yet mild flavor.
 

  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup Anthony's Coconut Sugar
  • 2 tablespoons Anthony's Coconut Flour
  • 1/3 cup Anthony's Cassava Flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  1. In a mixing bowl, whisk together the eggs, coconut oil, and coconut sugar. 
  2. Add coconut flour, cassava flour, baking soda, and salt; mix well. 
  3. Cook pancakes by 2-tablesponfuls on a hot greased griddle until golden brown on each side and cooked through.
  4. Serve and enjoy.

Prep time: 10 minutes
Cook time: 10 minutes
Yield: 8-9 pancakes

Anthony's Recipe- Cassava Flour Brownies with Caramel

Brownies:

  • 1/2 cup chocolate chips
  • 2 tablespoons maple syrup
  • 1/2 cup Anthony's Coconut Sugar
  • 1/3 cup coconut oil
  • 1/3 cup Anthony's Cocoa Powder
  • 2 eggs
  • 1/3 cup Anthony's Cassava Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Caramel:

  • 1/2 cup Anthony's Coconut Sugar
  • 1 tablespoon maple syrup
  • 2 tablespoons coconut cream
  • Pinch salt
  • 1/4 cup butter

Topping:

  • 1/3 cup chocolate chips

Brownies:

  1. Preheat the oven to 350° Fahrenheit and grease a 8"x8" glass baking dish.
  2. In a small saucepan, combine the chocolate chips, maple syrup, coconut sugar, coconut oil, and cocoa powder.
  3. Heat and stir over medium-low heat just until melted.
  4. Transfer to a mixing bowl. 
  5. Add the eggs and mix well. 
  6. Add the cassava flour, salt, and baking soda and stir until well mixed.
  7. Transfer to prepared baking dish. 
  8. Bake for 25-30 minutes. 
  9. Cool, cut, and remove from pan onto serving dish.

Caramel:

  1. In a small saucepan, combine the coconut sugar, maple syrup, coconut cream, and salt; mix well.
  2. Heat over medium-low heat and simmer for just a couple of minutes.
  3. Remove from heat and transfer to a small glass bowl.
  4. Stir in butter.
  5. Chill until cooled.

Assembly:

  1. Drizzle 3/4 of the caramel over the brownies.
  2. Sprinkle chocolate chips on top.
  3. Drizzle the remaining caramel.
  4. Serve and enjoy.

Cook time: 30 minutes
Yield: 16 brownies

How should cassava flour be stored?

Cassava flour does not require refrigeration. Store in a cool, dry place. For best freshness, it can be stored in the refrigerator or freezer.

 


Are Cassava and Tapioca the same?

Although both are derived from the same plant, there are in fact differences between the two. Cassava flour is the whole root that is peeled, dried and ground, while tapioca is the starch that is extracted from the cassava root.
