Tasted powder: good balance between cream taste, tangy taste, Blue cheese taste, salty taste, sweet taste. No off flavors like starchy, chemically, spoiled, etc., like sometimes happens in cheap or poorly stored cheese offered in supermarkets.

Seems to be a reasonable price for value, compared to quality Blue cheese in market.

Nutrition Facts: Serving 3 teaspoons, 15 grams, 4 grams fat, 2 gram total carbs, 5 grams protein, 315 milligrams sodium, 21% DV calcium.

There are no blue bits in the powder, it's all white. I wonder why.

Unlike other Hoosier Hill Farm products, this Blue cheese powder has only two things listed on the ingredient label: blue cheese and disodium phosphate.

In other words, there are less additives in this blue cheese powder than the others like Hoosier Hill Farm White Cheddar Cheese Powder and Hoosier Hill Farm Cheddar Cheez Powder,

Great product!! I just used some to make a dressing for a baked potato using some mayonnaise, buttermilk, salt, fresh ground black pepper, a splash of lemon juice. The label on the container has a recipe for 'instant blue cheese dressing' and says to use some cottage cheese 'for the lumps'. What a great idea!!! I will be using that suggestion, for sure because it makes good sense and will be a very inexpensive alternative from having to buy the real deal blue (blue) cheese!!! I do suggest making the dressing the day before using it so the flavors can 'mingle', it just makes for a better dressing. Years ago when I used to eat at a favorite restaurant, I would request a little salad with my blue cheese dressing. Now I make my own and I am very happy with the results using the Hoosier Hill Farm Blue Cheese Powder. I am very happy with it as well as the price. It is truly a great product and I'd venture to guess that if you followed the blue cheese dressing recipe on the container, your guests would be impressed!! Personally, however, I would recommend using mayonaisse rather than Miracle Whip and use buttermilk in addition to the sour cream, and add a little salt, fresh ground black pepper, a little garlic powder, and a splash of fresh (or bottled) lemon juice. Nonetheless, it is a great product, I'm tickled pink I found it on Amazon. Last time I bought Blue Cheese Powder was from the King Arthur Flour website (Baker's Catalog) some years ago and they no longer sell it. Thank You Hoosier Hill Farm and Amazon!!

I haven't tried this on many things other than as a dusting on salads and on popcorn, but this has fantastic flavor. Even my wife who really doesn't care much for anything other than butter and salt on the popcorn thinks it is great this way.

For salads, this does the same thing that anchovies paste does for Caesar dressing. You wouldn't suddenly exclaim that there's blue cheese on it, but it amps up the salad something fierce.

EDIT AGAIN, this time 12/30/14: wow, this makes a great dip. I mixed maybe a tablespoon of it dry with probably 2 tablespoons of Hoosier Hill Kale Powder, and maybe four tablespoons of peanut powder aka flour (not the Hoosier Hill brand, but the other one sold here on Amazon). Added water to make a dip, and some Rajun Cajun. Let sit a few minutes for the mixture to bloom. If you taste-test it, you're liable to want to eat the whole thing, company be damned, lol. That's what I'm doing now, as I type. ;)

EDIT: this also 'corrects' for the classical green bean casserole where you get too antsy and eat 1/3 of the condensed mushroom soup still in the can, while waiting for the powdered milk to liquify in the green-bean juice. :) Specifically, I decided not to use real milk per the recipe, but powdered milk instead (1/2 cup dry) on the green bean cans' liquid (only two not the normal 3). I thus added 2 tbsp of real butter and a heaping soup spoon of this powder, to make up for the 'missing' mushroom soup. The bleu cheese didn't overpower in smell or taste. And now that 'casserole' is happily cooking on my stove (faster than in the oven). If it matters, I also substituted potato sticks for some of the French's Onions. Very rich, oooh la la. Cooking in a caldera, can always finish the last five minutes by putting it in the oven (which would matter, were you also trying to cook a turkey). Oh: and the canned french cut green beans have more green-bean taste than normal (vertical) cut beans. (If you'd rather use fresh green beans, you'll need to cook them first, separately, and reserve the liquid.)

I love blue cheese & make my own dressing with real crumbled blue cheese & sour cream. It's getting kind of expensive though, because I like a lot blue cheese flavor. I thought I'd try a little bit of this freeze dried blue cheese to affordably augment the flavor & while still maintaining control the ingredients in my dressing! I loved the results of the dressing!! & I don't have to use so much actual crumbled blue cheese.
I also used this in cheddar & broccoli soup I was making - again, I wanted more cheese flavor, but I felt like I would have to add another 8oz of shredded cheddar cheese to get the soup cheesy enough, so I added a few tablespoons to the pot & my soup tasted great! It tasted cheesy, & not necessarily like "blue" cheese.
I think I will always have this in my pantry!
