The straight edge cuts much better than a serrated steak knife but because there are no high and low points on the blade it can get dull. The blade sharpens very easily and keeps its edge for the most part. If you have guests that are used to using bad steak knives they might dull your knives faster. You need to be able to take care of this knife to make it last. I use a highly rated sub $10 sharpener on mine and the knifes have always been great. It takes me less than 15 seconds to sharpen each blade because the edge is designed to be sharpened.
There are very few flaws for these knives. On one of my knives the handle has a tiny bit of play in the handle but its minuscule enough that if I wasn't searching for it I wouldn't have noticed it. This flaw doesn't change how the blade handles at all and the amount of play is so small it doesn't make it unsafe or get things stuck in the handle
I would buy these knives again and I recommend them to friends.
Sharp, solid, nice looking and they really slice through whatever you happen to be cutting...no more "sawing" with a dull edged serrated knife.
You can feel the quality of this product in your hand as you use this knife.
I would not hesitate to recommend these to anyone wanting a better knife than what they have. In fact, I am so happy with these knives I intend to look into what else Chicago Cutlery has to offer!
Bought because America's Test Kitchen rated them highly, they probably received absolutely PERFECT ones to test because these are NO WAY good enough to rate highly much less for them to recommend.
Sad how Chicago Cutlery quality has fallen.
I also ordered Kiwi steak knives for comparison and rated them 5 stars. Their straighter profile, lighter weight and lower price (about half the cost of these) made them an easy winner. They don't have walnut handles, and are ⅔ tang, but it's a bit easier to maintain an edge on the Kiwi. The Chicago Cutlery are close and I think the choice here comes down to personal preference.
Another knife I tried is the Dexter Russell Green River brand, which was the loser in my test. With a shorter, stubbier handle and a thicker blade that was harder to bring to a sharp edge, they carried a higher price tag and just didn't feel as good in the hand as the Chicago Cutlery and Kiwi blades.
