The removable bottom inserts allow you to push your goods out from below instead of trying to cut around the edges and beg them to come out cleanly.
This in itself poses the one (perhaps major) limitation in that you cannot use very liquid batters or fillings without a crust (such as crustless quiche) because it will seep out completely. Preparations such as these need a hearty liner, such as a pie crust or phyllo dough, or wonton wrapper. Blondies, thick muffin batters, and the like will do just fine.
Take care as with all non-stick cookware not to use sharp metal utensils when making your savory bits, and not to use any abrasives when washing. If the need arises to do more scraping than you'd like, I'd recommend a dishwashing brush and your regular detergent, or a non-abrasive scouring powder such as Bon Ami for those really bad situations.
Realize also that the individual wells have fluted sides; if you're looking for something more blocky and straightforward, you may want to find a different pan. But I think this works very nicely, with it's simple, corrugated-edge design, for just about anything you're looking to create and present.
Since I left my original review, I have used the tin and love the square shape for special occasions. I have used a 2.5 - 3 inch round cookie cutter to cut out squares for the dough from prepared pie dough. Put these into the tin, prick with a fork and bake about 7-8 min. The baked dough squares lift right out of the pan with no problem.
If you want to make a large amount of pastry, I would suggest ordering two or more of these - they only make 10-12 and it could be a bit of a pain to have to keep using the same pan over and over
I STRONGLY suggest you keep the bottom inserts separately! I just keep mine in a plastic baggie in a drawer with other pastry tools in the kitchen.
However, an annoying result of this design is that the slippery flat little metal bottoms that make removing the squares so easy also disappear, almost automatically. Also, they're easy enough to wash, but a bit tedious to air dry so they can be put away.
I've found that I can easily substitute a square of aluminum foil or parchment paper for those that are missing, but this is quite tedious. I know it's not really the fault of the designer or manufacturer, but this does make the pan less wonderful than you might hope.
