We looked everywhere and were going to try and have something made. Then we found this pan. We already use several Chicago Metallica pans for bread and they're fantastic! Easy-release, hard to scratch, and a long-lasting non-stick surface. They're heavy enough to cook evenly, and all-around great. This pan fits the same profile. It's about 2-3/4 inches at the very bottom, angling out to maybe 3" at the top of each channel. So the bread does have a slightly angled shape. But not so much that it's a problem.
The spill lip on the top is a bit problematic when washing by hand (we wouldn't want to do it in a dishwasher, ever!), but not really a problem. The non-stick is really very good. Plus, the lip makes it a whole lot easier to lift in and out of the oven. With the dough, the pan is large enough and heavy enough that it's easier to use two hands (with oven mitts). But it can be done one-handed.
It's the right size to fit into our DIY rising bin, and we get three 12-inch rolls (or baguettes if we make them). Cut each in half, and we've got a 6-inch subway roll. The channels are around 3-inches high, so there's plenty of room for the rise, proofing and oven spring. AND...Nobody else makes ANYthing like it! We did a lot of looking, everywhere and there's no way to do this with such a wet dough. This pan is The Answer.
